I made this last night (making good on my vow to try something from the new Inspired Vegetarian columnist). Did a search and didn't find any reviews, so thought I'd post mine.
It was easy... lots of peeling and slicing, but not much else. I had never cooked with beets, turnips, or parsnips before, so it was educational.
The veggies smelled wonderful roasting in the oven. They smelled great on the stovetop too after I added the ginger and sage. The color was absolutely gorgeous... everything glazed in that deep beautiful red. I did add a little cornstarch slurry at the end of the cooking time to thicken the liquid just a bit, but otherwise I followed the recipe exactly. Oh, I didn't have any creme fraiche, so I dolloped with light sour cream instead.
The flavor was wonderful. I didn't like the turnips (took me awhile to figure out which veg. it was since everything was red!), and this was my first time eating cooked beets, so I'm not sure I LOVED them, but they were pretty good. The juice/liquid/whatever was heavenly. The vegetables were soft but not falling apart.
I ate this with rice pilaf and a salad.
The only real downside was the time. I'd save this to make on a weekend next time around. Oh, and the pink fingerprints I found around the kitchen this morning. I was so careful not to get beet juice on the counters, etc., but apparently I touched all kinds of things with my pink fingers! :p
