Hi- aren't I the bossy one!! I don't mean quick as in immediately (but I love quick responses) you know how sensitive I can be!!-:D
I am under a lot of stress at the moment- I will be living at my MIL's for a few days and alot of other little things are also crying out for attention!! I will only be home to make the family quick meals.
I miss real cooking!!
My MIL is in the cardiac ward and I am more inspired than ever to stay fit and healthy. In her case al she needed was a pacemaker because her heart is great but the electric connection was wwearing out (after 93 years of perfect health!!!).
I would love some quick, heart healthy and sping like ideas!
I know we all ask for quick stuff all the time- any new ideas!! TIA. Love you all, Maureen:)

Hi Kima,

I find that fish is always a good option for quick and
healthy meals since it cooks so fast.

How about the Honey Mustard Fish from Moosewood that K Valley posted?

Also, I have a recipe for Indian spicy grilled chicken that I have adapted for fish. The recipe is from a Madhur Jaffrey cookpook.

What about something crockpotty? Might be a time saver for you. A hearty minestrone perhaps

We're starting to get some awesome fresh produce down here, you too? Quick, healthy stir fry's might be great. The steamed fish in ginger wine sauce from Jan/Feb CL got great reviews and was very easy.

Did you pick up that Superfast Suppers supplement? I didn't but I bet there's some stuff in there.

Get your family to help out with meals-- you aren't superwoman! Take care of yourself along with everyone else, you're *not* last on the list. You're important.

I like to keep cooked, seasoned beans on hand (or cans of beans, if that's easier) to eat with tortillas. The beans reheat quickly in the microwave and then you can mash them and put them into the tortillas (if you want to take it a step further, you can cover them with enchilada sauce for enchiladas) or mix them with frozen spinach and eat them as a meal with tortillas on the side.

Oh sweetie- things sound really crazy right now. You can't do it all and that's why God made delis and pasta sauce in jars!!

Soup soup soup! But soup isn't necessarily quick...

The "Baked WHite Beans and Sage" recipe I posted a couple of weeks ago was really quick, easy, and filling. ANd the salmon and rice recipes I made earlier this week from Moosewood Low Fat were very easy and fast.

Lentils cook up fast and you are Indian food queen here- how about a simple dal? Pasta e fagioli; CL's Quick and Easy Black Beans on the recipe finder; a frittata or Eggs Piperade (on the recipe finder); Grilling fish or chicken breasts with steamed veggies and boiled new potatoes.

Does that help? How about a <<<<<<<<<<HUG>>>>>>>>>>>?

Seriously though, I have three words: Soup! Soup! Soup! :eek: If it's as cold up there as it is a few miles south of you, soup is good food!! I'd make a big pot of soup and eat on that, supplementing with sandwiches and salads when needed. Beans are also a great suggestion. In fact, combine the two: Navy Bean & Ham Soup! ;)

I'd also suggest roasting a chicken to have one night and using the leftover meat for another recipe (the Chili-Roasted Chicken with Garlic Gravy is a keeper...) and the leftovers could make the White Bean Chicken Chili that most of us loved also!

A big beef roast in the crockpot does not have to be unhealthy! The meat can be used for stews, stroganoff, BBQ beef sandwiches, burritos, or even casseroles! Endless possibilities.

Thank you!! I knew you guys would inspire me- i know quick dishes but right now its nice to have others think for me!!
I am just leaving to get MIL from the hospital. My plan is to print out all your ideas and then go shopping tomorrow.
Really things aren't that bad just real busy. We are meeting with a nurse tomorrow and hope to get some help in place.
BTW- if any nurses are reading this- you are part of a wonderful group of people! The system up here is in disarray but the NURSES are incredible!One of MIL's nurses is coming to see her on her day off. I was close to tears when she said that!
Unbelievable!!!
And yes Julie- bought stuff will definately be on the menu! Tonight they are having bought lasagna!:)

First of all great big hug to you from all of us cause clearly your platter is full and (setting the ping pong table aside) you gotta deal. Lisa's right as well; ask for help!

The White Bean Chicken Chili is great as is the Minestrone idea. Grab some big bread and freeze what you don't use until next time. When Dad was ill we had the non stop soup and pasta patrol. Keeping an eye on intake I say go for soups. Also maybe a great big salad in the fridge.

Have somefolks fire up some chicken and freeze it as well. I just read in shape mag about a woman who cooks all her chicken and potatos at once when she gets home and freezes everything. Different topping for variety will appease anyone and you can also chop the chicken up and throw it in some wraps with the salad and top with some ff ranch. That's a great filler with a potatoe on the side.

Hang tough BB sister - we're pulling for you and yours!

2 teaspoons olive oil
3/4 cup chopped green bell pepper
1 teaspoon ground cumin
1 teaspoon dried oregano
2 garlic cloves -- crushed
1 tablespoon red wine vinegar
1 can diced tomatoes and green chiles (10 oz) -- undrained
1 can black beans (15 oz.) -- rinsed and drained
4 flour tortillas -- (10-inch)
1 cup reduced-fat shredded cheddar cheese -- (4 ounces)
Fresh cilantro leaves (optional)

1. Heat the oil in a large saucepan over medium-high heat. Add the bell pepper, cumin, oregano, and garlic; cook 3 minutes, stirring frequently. Stir in vinegar and tomatoes; reduce heat to medium, and cook 10 minutes. Stir in beans; cook 5 minutes or until thoroughly heated.

2. Warm tortillas according to package directions. Spoon about 1/2 cup bean mixture down center of each tortilla using a slotted spoon. Sprinkle each serving with 1/4 cup cheese, and roll up. Garnish with fresh cilantro, if desired. Yield: 4 servings: (serving size: 1 tortilla).
