my supper club has decided on the theme of green- we're meeting on mar 17 :) someone has picked key lime pie (which i dearly love but my recipe is no where near light). besides a pesto, what other green not-from-a-bottle-of-green-dye recipes would you suggest?

This is becoming a popular repeater on the BB but how about roasted asparagus?
It's in season and its naturally green !!

What about a green Thai curry?
Or my spinach pasta recipe (search the thread titled low fat dinner for one).
Happy St. Paddy's Day!

I'm assuming green jello won't work.;)

i love all your ideas so far! and yes green jello will work as green-jello-margarita-shots!!
i have been meaning to try the aspargus in this issue and i love thai green curry and i love guac. i'll see what the host picks for the main dish. might have to bring more than one thing.
i thought this might be fun in a challenging sort of way when it was suggested but i enjoyed the red for valentines day better.

What about the stuffed grape leaves from March 01? I've been meaning to try those.

How about trying green chili? You could use green tortilla chips for dipping if you wanted.

They make spinach tortillas (which don't taste like spinach, so dont' be scared), that you could use for quesadillas or enhiladas
Lettuce...you could make the endive stuffed w/goat cheese appetizers
Green peppers....you could either do traditional stuffed green peppers or chili rellenos

Spinach salad, zucchini, green apples, cole slaw, or the two together in Honeyed Apple Slaw. Some kind of green burrito/enchilada thing made with those green tortillas. Celery.

One other idea: pistachios. Maybe some kind of fish encrusted with these? Also, kiwi or honeydew. There was a CL article on green tomatoes last year too. I don't know if you could find those.
