Does anyone know whether you can freeze feta successfully and how is the best way to do it?
Thanks
Terri
Most cheeses freeze very well and I really think feta would not be an exception. I would wrap it a few times in plastic wrap and then maybe a layer of partchment paper or wax coated paper, even a paper bag if you have to.

I have consistently purchased blocks of organic feta from a local co-op and frozen the blocks of feta in their original packaging with no trouble. The flavor and consistency is unaffected. They thaw easily in the refrigerator within 24 hours.
So, I say, go for it. http://www.cookinglight.com/bbs/smile.gif

Thanks for your quick replies mlou and lorilei, I will give it a try. So, many recipes call for it and I love it in salad.
Thanks again.
