Well i finally had time to sit down and figure out a week's worth on dinners instead of flying by the seat of my pants!
Here's mine- what's yours?:)
Felafel served with pita and veggies
Bell Peppers stuffed with herbed tofu and rice (The Complete Soy Cookbook)
White beans with sage (the recipe Julie posted from Natural Health magazine)
Greek-style Scampi posted on the Best Shrimp recipe thread
Grace's WW Tomato and Pepper Soup
Last Minute Lasagna posted here from Real Simple Magazine
Samosa Quesadillas from CL- I got it form here a long while ago!
Roasted Root Vegetable Stew from March CL 2002
There- that should keep us for awhile. of course I will add side dishes etc. I sort of wing that part of the meal!
Now to write out my shopping list for tomrrow and I am ready for the week ahead!

I've been feeling terribly uninspired lately, but I guess I'll come up with something...
Stir Fried Beef and Asparagus from April 2002 Bon Apetit served with brown rice and maybe with the addition of baby bok choy
Chile roasted chicken with roasted garlic gravy . Epicurious, Jewel posted this some time ago. I plan on serving it with the chipotle baked beans from March 2002 and b-b-q slaw (totally a Western North Carolina food)
B-B-Q chicken pizza my own creation, to use up the chicken from the chile roasted chicken
Butternut squash with coconut, lime, and cilantro or something like that, posted recently on the BB
Spaghetti and Meatballs because DH has been begging for them for months. I'll make one of the tomato sauces from CL to go with them.
Also, some kinda tuna or shrimp dish. I have both in the freezer, just gotta figure out what to do with them.
Gee if that is you uninspired!!:D

Ahhh. This week's menu. Let me tell you how excited I am about this week's menu... it's actually not much of a menu, just lots and lots of eating out in PARIS! :D

Going on a trip this weekend, so my week's a bit short, but:
Sunday--Chili Roasted Chicken with Roasted Garlic Gravy (Jewel), mashed potatoes, green beans with tomatoes
Monday--Broccoli Pasta
Tuesday--Spinach Artichoke Calzones with Spicy Marinara Dipping Sauce (Rachael Ray--30 Minute Meals)
Wednesday--Italian Chicken Salad (Express Lane Cookbook), rolls, fresh fruit
Thursday--Ruedas (a Mexican wagon-wheel pasta/soup dish--like fideo, if you're familiar with that)
Can't wait for that Roasted Chicken today!

Maureen, let's buy an around-the-world ticket and go together! We could start at my house (DH'll take us to the airport)and end at yours, pick up Grace on our way east. Hi to everyone.
This week's menu:
Sunday: One-Pan Whiskey Chicken (we had sauce leftover from the pork version), maple sweet potatoes and broccoli.
Monday: Chili, cornbread twists and probably leftover broccoli.
Tuesday: I get to go out with the girls! :) I'll probably be having soup and salad at Ruby Tuesday's.
Wednesday: Spaghetti Carbonarra (CL, 2001), salad and bread.
Thursday: Turkey Jambalaya (CL, November 2001) - I'm making this for our recipe club. Sides??? Chocolate Bundt Cake (CL, Jan/Feb 2002).
Friday: White Bean Soup (CL, March 2002). Possibly served with a veggie fritatta.
Hmmmm...looks like a "meaty" week. I've been trying to do 2 meat dishes, one seafood dish and the rest vegetarian. Oh well.

DH is travelling towards the end of the week, so I really don't have much planned, but I am making something with salmon tomorrow.
I have a recipe for Spice-Crusted Salmon with Lime-Orange Salsa that I printed out from MC, but I don't recall where the recipe came from. I'm thinking of making that with the salmon. Also, at some point I want to finally make Vidalia Onion Risotto with Feta Cheese, and a WS recipe Rigatoni with White Beans and Tomatoes.
I will have to see what I get around to, besides the salmon though.

Thank you, Julie! You are so sweet. Yes, we leave on Wednesday!! Do many places have menus that you can keep? I am definitely planning on keeping a journal of what we eat (not for weight watchers purposes :o for memory purposes), and I will give a full report!
By the way , our hotel has been switched by the booking company to a place on the left bank. Villa Lutece on Rue Jenner. Not quite in the thick of things anymore, but I think still on the egde of the area I consider central.

Sunday - Spicy Chicken and Peanut Stew Jan/Feb '01. This was a complete failure. I threw the leftovers away. I really wanted to like this one too.
Monday - Chunky Potato and Swiss Chowder Mar '01, French Bread and Salad
Tues - Steaks! (Alton Brown style), and Asparagus with Blue Cheese and Almonds (CL 1996 Annual)
Wed - Chicken Tortilla Soup (CL Complete)
Thurs - Leftovers or Salad
Fri - Blackened Catfish CL Jan/Feb '01, broccoli

Yeah, we're having a meaty week too. And after almost 3 months of really cutting back on our meat consumption :rolleyes:

Sun: sushi (homemade) california and tuna rolls
Mon: NY Strip steak, CL onion rings from 2001, rosemary potateoes, and sugar snap peas
Tue: Chineese chicken w/peanuts from March 02 and steamed rice
Wed: Porcini risotto and mixed green salad
Thurs: Leftovers!!!
Friday: Mac and cheese (haven't decided which one)

Smothered Chicken and Barley ( J/F 98 -posted on board 3/10), Onion and Dill bread, salad.
Brisket and Beer (C/L Complete), mashed potatoes and peas
Veal Oscar , angel hair pasta, salad.
Desserts for the week are Black Bottom Banana Cream Pie (C/L 98) and Apple Marzipan Gallette(March 02)

Sauteed' greens (we're on a green kick this week)

Sunday: Pancakes and eggs -We had just returned from snowboarding and I was looking for something easy. This was my first attempt at over easy and they came out perfectly (truth be told, egg dishes scare me :o )
Monday: Chipotle Turkey Cutlets

Asparagus
Tuesday: Boss is taking a group of us to dinner :)
Wednesday: Firey Chipotle Baked Beans
Brocoli Bread
Salad
Thursday: Pasta w/ watercrest, tomatoes and goat cheese
Friday: Flying to Atlanta - mom's lasagna!
Saturday: Dinner out.
Sunday: Hopefully mom's pork tenderloin.

Whoa...some of your menus sound just mouth-watering!! My week will be rather dull (saving my food money for the big blow-out party I am having for the Academy Awards), but here it is.

Curried Coconut Shrimp and Veggies

Vickie - I have made them before. While they are not quite like the restaurant kind, I didn't miss all the grease! I used Walla Walla onions, which were so sweet they really made these great. My first batch had too much batter, but going forward I let ALL the excess batter drip off.

I travelled in BC. Love it. I lived in Alberta, Manitoba, Ontario, Quebec and now New Brunswick.
Canada is a really nice country. I really like every part I visited or lived.

It's Terrytx again. Maybe you can tell-I'm helping my Mom learn the ins and outs of this board.
This week menu for me is what ever she decides to fix me and my gang! So far we have had roast beef, mashed potatoes, green beans, etc. We have also had crayfish, poorboys, ham, lima beans, okra, and all sorts of good cajun and southern foods.

On Friday I leave for a trip to visit my parents in California and celebrate my dad's 60th birthday, so the next week or so of menus will be planned by someone else! :)
