I actually cooked tonight. Felt pretty good. I'm tired of all the fast food we've been eating.

This is pretty good and easy and you only dirty ONE THING! I'd give it a 7/10. Although it's the first recipe I've ever made where you can't/shouldn't add any more extra garlic...unless it was the sweet bell peppers I threw in...gave some bites a funky taste.

Curried Chicken

3/4 lb. skinless boneless chix cut in 3/4 in. pieces (I used tenders)
2 onions, chopped
4 cloves garlic, minced
1 TB reduced sodium soy sauce
2 tsp. chili powder (used Penzy's med. hot)
1 tsp. curry powder
1 tsp. turmeric
1 tsp. powdered ginger
1 tsp. olive oil
2 c. ff chix broth
1 c. jasmati or basmati long-grain rice
1/2 c. raisins (could have used more)
1 1/2 c chopped carrots
(I blended up all the spiced together w/soy before tossing in)

Throw in your soaked clay pot. Cook for an hour. You're done.

Serve with zucchini or something green...

This looks really good - and, I seem to be on a curry kick (kurry kick?) lately. Do you think this would work in a slow cooker? I don't have a clay pot.

probably but on high heat, maybe for the shorter time. YOu don't want the raisins turning to mush, nor the spices diluted (which to me always seems to happen when you cook something all day). If you're going to be home while it cooks, you could throw the raisins in in the last hour. I would think it would taste pretty much the same.

I love curries & have a clay pot but never know what to do with it. At what temperature and how long do you bake this dish?

Thank you so so so much for posting this recipe. I made it last night and DH and I loved it! It is so easy. Spicy without being overpowering. The clay pot made the chicken come out very tender and juicy. This was perfect for yesterday- we got some more snow. (that's what I get for living in the mountains!)
