I'm having company this weekend, and we don't usually do a big breakfast. I was looking for something that I can prepare ahead of time perhaps the French Toast Souffle type or Breakfast Sausage Casserole or any other ideas. I would love to hear what has been tried and enjoyed. Thanks in advance!! LaurieC

Farmer's Casserole
SOURCE: Better Homes and Gardens
YEAR: February PAGE: 208
INGREDIENTS FOR 6 SERVINGS:
3 cups frozen shredded hash brown potatoes
3/4 cup shredded Monterey Jack cheese with jalapeno peppers or shredded cheddar cheese (3 ounces)
1 cup diced fully cooked ham or Canadian bacon
1/4 cup sliced green onions
4 beaten eggs or 1 cup egg substitue
1 (12-ounce) can evaporated skim milk
1/4 tsp. pepper
1/8 tsp. salt
INSTRUCTIONS:
Grease a 2 quart square baking dish. Arrange potatoes evenly in the bottom of
the dish. Sprinkle with cheese, ham and green onion.
In a medium mixing bowl, combine eggs, milk, pepper and salt. Pour egg
mixture over potato mixture ini dish (The dish may be covered and refrigerated
at this point for several hours or overnight.) Bake, uncovered, in a 350º
oven for 40 to 45 minutes (or 55 to 60 minutes if made ahead and chilled) or
till center appears set. Let stand 5 minutes before serving.
Yield: 6 servings

Calories 247 Fat 12g Protein 18g Carbs 18g Sodium 516mg
I love the farmers casserole that was posted on this BB. I like it best with the jalapeno cheese, it adds a bit of a bite and canadian bacon. It is so easy and soooo gooood.

I have family coming into town this week and spending a night with us. I'm planning to make up a batch of cinnamon rolls a day ahead of time and keeping them in the fridge for a slow rise and then baking them the morning they're here.

If you would prefer to spend the time with your loved ones instead of in the kitchen, this is an easy way to put a meal on the table.
Get the microwavable pancakes or waffles from the frozen section of your grocery store. (I get the ones with extra calcium and vitamins added!) Then, after nuking them, top them with a mixture of sliced fruit and some low-calorie maple sugar. (I love this with a mixture of bananas, blueberries and peaches!)
This is a super-quick and popular breakfast. (Plus, it is good for you!)

I would suggest making muffins ahead and one of the caseroles in CL or posted here.

Make coffee, have juices and pop in the casserole in the oven and you can talk etc while it cooks.

I like to make Breakfast Burritos. They can't be made ahead, but it doesn't take long to make scrambled eggs. All you need is:
flour (or corn) tortillas
scrambled eggs
cheddar chesse
salsa
Of course you could have a make-your-own-burrito bar and have a ton of condiments.

Thank you all for your replies... I am going to try the Farmer's Casserole that a few of you recommended. Have a silly question perhaps you could answer. We are attending a wedding at 4:00 pm on Saturday and I want to serve this Sunday morning. Can I make it before I leave for the wedding (about 3PM) and refrigerate until the morning, or will I have to come home from the wedding and put it together later that evening??? Didn't know if it hurt anything to be combined that early. Thanks in advance, LaurieC

You can make it before you go to the wedding with no problem.
