Donnalee, I make a broccoli casserole for Thanksgiving that my family really loves. It's super easy! Basically, I steam about a pound of broccoli florettes until they're tender, then add them to a casserole dish and top with cream of mushroom soup, milk, a few drops of worceshire (sp?) sauce, and pepper. Top with those Durkee onions and bake for about 20 minutes. It's pretty much the same recipe for green bean casserole, but I use broccoli instead. I don't know if you were looking for something a little more gourmet, but it tastes good.

I'm not sure what kind of casserole you're looking for but this recipe is from the new CL Make It Ahead supplement. I haven't tried it yet but maybe someone else can post their review. Good luck!

Broccoli Casserole

Cooking Spray
2 cups presliced mushrooms
1 cup (4ounces) shredded reduced fat sharp cheddar cheese
1 cup cooked long grain rice
1/2 cup diced onion
1/4 cup fat free milk
1/4 teaspoon salt
1/4 teaspoon black pepper
1 (10 3/4 ounce) can condensed reduced fat, reduced sodium cream of mushroom soup, undiluted
2 (10 ounce) packages frozen chopped broccoli, thawed

1. Heat a large nonstick skillet coated with cooking spray over medium high heat. Add mushrooms, saute 5 minutes or until tender. Stir in remaining ingredients; cook over low heat 4 minutes or until cheese starts to melt, stirring constantly. Spoon into a 2 quart casserole coated with cooking spray. Cover and chill.

2. To seve, let stand for 30 minutes at room temperature.

3. Preheat oven to 350 degrees.

4. Bake, uncovered, at 350 degrees for 45 minutes or until thoroughlt heated. Yield: 5 servings (serving size 1 cup)

Here's the one we use at Thanksgiving with much success. Also posting a cold broccoli salad idea cause we sometimes make that, too--it's different, but very good.

Broccoli and Corn Casserole

1 10oz. pkg. chopped frozen broccoli
1 can creamed corn
1/4 c. cracker crumbs
2 Tbsp. butter, melted
1 egg, beaten
1 Tbsp. dry minced Onion
1/2 tsp. salt

Mix and put in casserole dish. Top with the following:

2Tbsp. butter and 1/4 cup cracker crumbs, tossed and browned in a skillet.

Bake at 350 for 45 minutes.


Broccoli Salad

1 bunch fresh broccoli cut into small pieces
6 green onions, sliced
1/2 c. celery, chopped
1/2 c. white raisins
1/2 c. sliced almonds
6 slices crisp bacon, crumbled (I use the low fat bacon bits)

Mix above together. Add dressing (below) just before serving.

Dressing Recipe
1/2 c. no fat mayo
1/4 c. sugar
2 Tbsp. vinegar

Mix together vigourously.

This is the recipe a friends great aunt gave me years ago.

Broccoli Rice Casserole

2 pkgs frozen broccoli flowerettes (thawed)
2 cups cooked rice
1 onion, chopped
2 cans cream of mushroom soup
2 (8oz) jars Cheese Whiz
1 cup milk (I use 1%)

Saute onion in large sauce pan, until transparent. Add remaining ingredients, except broccoli and rice,mixing well and heat through.
Place broccoli and rice in large casserole dish that has been sprayed. Pour cheese mixture over the broccoli and rice. Bake at 325º for approx one hour.
This recipe is for about 15 (which is what we have at Thanksgiving, so you could cut it in half, if necessary)

I have a recipe that I use every year at Thanksgiving. You know those few dishes that you fix and children actually ask for.Well this is my childrens. It is rare that a child would ask for Brocolli. But both of my kids love it and are now fixing it for their families now. It is a recipe from "Southern Living". I do not have the recipe with me, but here a some ingredients and if you feel that you will like it, let me know and I'll post it tomorrow.
Brocolli Spears in center of rectangular casserole dish
stuffing around the edge of dish
cream cheese sauce poured over top and then topped with cheddar cheese. My mouth is watering just thinking of it. It is baked in the oven. http://www.cookinglight.com/bbs/smile.gif

Here is our family favorite. Although it is not light you can lighten it by using lightened ingredients.
1 16 oz package frozen broccoli
1 can cream of mushroom soup
1/2 cup mayo
2 eggs beaten
2 Tbsp. minced onion
8 oz. shredded cheddar cheese (I prefer sharp)
1/2 tsp. salt
1/4 tsp. pepper
about 1/2 c. bread crumbs
2 Tbsp. butter

Preheat oven to 350. Cook broccoli for about 5 minutes. Drain. Mix together first 8 ingredients (broccoli through pepper) Place in a buttered casserole dish (2 qt. I think) cover with bread crumbs and dot with butter. Bake for 45 minutes. Let stand about 10 minutes before serving.
I usually use light cream of mushroom soup and mayo but not light cheese. I think I also add more pepper but that is personal preference. This recipe has been passed down the family so much that I don't use a recipe.

I would like to serve a good broccoli casserole with my Thanksgiving dinner. I don't have a really good one. Does anyone out there have a tried and true, declicious recipe? I would appreciate your help.

this one is a hit!

Moms casserole
2 poached chicken breast, shreddred
2 cans cream of celery soup
2 cups of cooked rice (minute rice made with orange juice NOT WATER)
1 10oz package of chopped broccoli
1/2 cup of cheddar, monterry jack, and parmesan cheeses
1 8oz can of waterchestnuts, sliced and peeled
1/4 cup chop green onion
2 good shakes of worchestershire sauce
7 squeezes of lemon juice
1/3 cup of sherry


mix all and add chicken and rice.

Bake at 350 for 45 minutes

This recipe has been a family tradition for years and it's the simplest recipe to make, especialy at holidays. Don't get turned off by the velveeta - I honestly hate the stuff but don't even notice it's the cheese used in the casserole.

Steamed broccoli
Low fat Ritz Crackers
Low fat Velveeta (stick version)
melted margerine/butter (stick)

Spray cassarole dish with non-fat spray. Then start layering in the following order: crushed Ritz crackers, broccoli, sliced velveeta. Your last layer should end with crackers. Sprinkle melted margerine/butter on top right before baking. Bake at 375 for about an hour (really depends on size of dish).

Notes:
The amount of ritz and velveeta you use in each layer is up to your taste. The more crackers you use the denser and more buttery it tastes. The more cheese you use, the cheesier it is. I tend to make the broccoli stand out and go less on the other 2. Typically about 6 crackers crushed per layer and about 3 slices of velveeta (cut into squares and strategically placed at different locations on each layer)per layer.

I've also cooked it at different temperatures as I let the other items in my oven determine the temperature. All that matters is that it is cooked throughout and the cheese is melted.

I have tried many times to not make this dish for family events and have always been cohersed into making it. Everyone seems to love it.

I don't know if anyone will know what I am talking about, but earlier this year there was a recipe in cooking light with broccoli, red peppers, and evaporated milk. Obviously some other stuff. I was just wondering if anyone tried this and what they thought.

Broccoli Elegant

Favorite packaged stuffing or perferably homemade
2 (10 oz) pkgs thawed broccoli spears
2 tblsp margarine
2 tblsp all purpose flour
1 chicken bouillon cube
3/4 cup whole milk
1 (3 oz) pkg cream cheese (softened)
1/4 tsp salt
4 green onions, sliced
1 cup (4 oz) shredded cheddar cheese
paprika

lightly butter 13x9x2 baking dish, spoon already prepared stuffing around inside edge of dish. Make a well in the center, place broccoli in the well. Set aside.
Melt margarine in a heavy saucepan over low heat; add flour, stirring until smooth. Cook 1 minute stirring constantly. Stir in bouillon, gradually add milk, cook over med heat, stirring constantly until thickened & bubbly. Add cream cheese & salt. stirring until cheese is melted & smooth. Stir in onion. Spoon cheese mixture over broccoli, sprinkle with cheddar cheese & paprika. Cover dish, bake at 350 for 35 minutes. Remove cover & continue to bake 10 minutes, or until hot.

Many years ago. It is yummmmmmy!!
hope you like it, you could lighten some of the ingredients and I don't believe it would alter the flavor any.

Today is my 3rd time to make Carolyn's BROCCOLI ELEGANT and it's about time I gave her credit for a great recipe!. I use a little less margarine and lowfat cream cheese, skim milk and just a little cheese on top. We like this as a main vegetarian dish.
