Had this recipe sent to me and it looks fabulous - I am not good with that slide rule with a 'whole' recipe and wondered if somebody could help - obviously LF ricotta could be used and sundried tomatoes without oil.........this looks so good!

Joy's Baked Ricotta

600g fresh ricotta cheese
1/2 teaspoon sambal oeleck (crushed chillies is fine)
6 sun dried tomatoes in oil, finely chopped
8 cloves garlic, crushed
good quality olive oil
1 teaspoon fresh thyme, chopped

Place half the cheese in base of a 20cm shallow ovenproof dish and pat
down. Scatter the sun dried tomatoes, sambal oeleck and half the
thyme and garlic evenly over cheese. Cover this with the rest of the
cheese and spread over remaining thyme and garlic. Drizzle with olive
oil. Place in a pre-heated 180C oven for about an hour, or till top
is golden. Serve with crusty bread or crackers for a delicious nibble.

You forgot to let us know how many servings this entails. You'll have to adjust this to the amount of olive oil you use. Here's the info for the whole recipe. Find a calculator, divide, and use your point finder.

2487 Calories; 171g Fat (57.6% calories from fat); 102g Protein; 180g Carbohydrate; 39g Dietary Fiber; 304mg Cholesterol; 2264mg Sodium.

Thanks so much MK - but there were no serving 'quantities' stated, I guess it's just an appetizer - and whoever - did not post the servings - that is why I posted - just to see if someone knew how to put the ricotta/olive oil combo together - thanks..............going to ask at the meeting this week to see if someone can come up with a point value............:) :)

Lanie, I promise you can do this. It's not hard at all. Figure out how many servings you think you can get out of this. Take out the dish you'll bake this in, and visualize how many cuts you'll get out of this. That's your servings number.

Then, just do the following calculations (/ is "divided by"):

1) 2487calories/number of servings = calories per serving
2) 171 g fat/number servings = fat grams per serving
3) 39 g fiber/number of servings = fiber grams per seving

Then just use your slider. :) See, it's easy.
