View Full Version : If you were a pork chop, how would you like to be eaten?

I can never find good recipes, IMO, for pork chops OR bone-in chicken. I've done a few searches on the Allrecipes site but it takes forever to go through all of those and each time you hit back, it brings you to the top of the list each time...
I've done the whiskey porkies but don't have any mushrooms. Didn't like cotes de porc and I've already tried the orange ones...
I found a recipe in this month's issue, but it calls for bell pepper and I only have one and it's already sliced...I wanted to throw them in my clay pot, but only have one cookbook and there was nothing interesting in there...I hate being boring.

I have a great recipe for pork chops and red potatoes. You season the chops and potato slices in cajun seasoning and then roast them in chicken broth. They come out so flavorful and tender! Let me know if you'd like the recipe. I'm not sure where I got it.

We really liked the Honey and Spice Glazed Pork Chops from the Jan/Feb issue. This weekend I made the Broiled Honey Glazed Pork Chops from the CL Superfast Suppers supplement except I grilled them and they were great.
Here's one that I adapted and it turned out well...

Onion and Dried Cherry Glazed Pork Chops
Recipe By :I adapted from Healthy Helpings by the National Pork Board

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
4 pork chops -- about 3/4-inch thick
salt and pepper OR seasoning blend of
choice (lemon-pepper, garlic-pepper, tc.) -- to taste
olive oil Pam
1 Tablespoon olive oil -- divided
2 small onions -- sliced and seperated into rings
1 Tablespoon packed light brown sugar
1 teaspoon cornstarch
1/3 cup water
1/3 cup sweetened dried cherries
3 Tablespoons balsamic vinegar
1 Tablespoon honey
Season chops to taste.
Spray large non-stick skillet with Pam. Add 1 teaspoon olive oil and heat over medium or med-high heat. Saute' chops for 6-8 minutes or until nicely browned on the outside, turning once. Remove from skillet; keep warm.
Cook onions in remaining oil in same skillet, covered, over medium-low heat for about 12 minutes or until onions are very tender, stirring occasionally. Stir in brown sugar. Cook over medium heat, uncovered, for 3 to 4 minutes or until onions are lightly browned.
Meanwhile, stir together cornstarch, water, cherries, vinegar, and honey; add to skillet. Cook and stir until bubbly and slightly thickened. Add pork chops back to skillet; heat through.
Serving Ideas : Serve with basmati rice and steamed broccoli/cauliflower/carrots.
NOTES : If you like a lot of sauce, you might want to double it.

whaddya know, i'm having pork chops tonight! i've tried a bunch of recipes but always go back to my tried and true. it's actually "throw in a bit of this, bit of that" but no matter what you put, it's so yummy!
here are the ingredients, add as much or as little as you want!
soy sauce (this is the base)
sherry cooking wine
rice wine vinegar
dark sesame oil
garlic (i cheat and use garlic powder)
sambal chili paste (adds a nice kick but you don't have to have it)
s & p
marinate a few hours (overnight makes it divine!) and then saute in a skillet with a bit of olive oil. yummy!

My favorite is a recipe for "Sticky Pork Chops". I've been making them for about 8 years now, at least once a month! I got the recipe from my husband's daughter. YUM!!
Salt & Pepper chops. In a skillet heat a little oil. Add chops and chopped onion to taste. ( I use a handful). Brown chops and onion till onion is carmalized. Add finely minced garlic ( 1 clove) Brown slightly. In a bowl mix 1/2 cup worchestire sauce, 1 TB djon mustard, 3 TB honey and pinch cayenne pepper. Pour over chops in skillet and bring to a boil. Turn down heat to low, cover and cook 30 minutes! Serve with mashed potatoes or buttered noodles!

I would season w/salt and pepper, sear, throw them in the pressure cooker with some white wine, vermouth or chicken broth, pressure cook for 10 minutes. Thicken the liquid w/a little flour. Serve w/mashed potatoes and some steamed green veggie like broc. or beans.

I used the asian barbecue sauce marinade (Asian Barbecue Chicken - March 2002) on pork chops a couple of weeks ago and it was divine!!!

Our latest favorite porkchop recipe can be found in the latest Penzey Spice catalog OR on their website. It is a recipe for skillet potatoes & porkchops. VERY flavorful & oh so easy to prepare that DH likes to make this when it is his turn to cook. I would really like to know what other people think about this recipe!

This recipe has been handed down by my mother. When we were growing up we had this dish about once a month. And I cooked it for my family about as much as my mother. Its one of those throw together, very flavorful dishes. Very basic. Wonderful blending of flavors...we always had some type of potatoes with it, such as scalloped or mashed..goes great with beans.
layer in rectangular baking dish:
in this order
Large can "Bushes Baked Beans w/ Onions"
slice thin 1 medium onion (ok, we like onions)

Pork chops, seasoned w/ salt, pepper, garlic powder on both sides.
Do not cover, bake in preheated 350 oven for 30 minutes, turn chops over and cook 20-25 additional minutes.
We always have beans on hand

If I were a Porkchop, I would want to be eaten with a lot of TJ's spiced chunky applesauce! :D
I am always on the lookout for a good porkchop recipe.
In the June 2001 issue there is a great recipe for Grilled Pork Chops with Sweet Peach Sauce. During the non-grilling season I make the rub and toss the chops under the broiler. Frozed peaches work well to make the sauce. If I'm lazy (which is most of the time ;) ) I serve it with applesauce - like the chunky kind of TJ's.

I don't know much about pork chops, but here's a good recipe for bone in chicken breasts.
Take about 1 pound of bone in breasts (skin removed) and marinate them in whatever Italian (preferably fat free) salad dressing you have. .
Place the breasts in a casserole dish.
Mince or cut up a head of garlic and rub it all over the chicken.
Sprinkle chicken and garlic with 1/2 packet of dry, Good Seasons Italian dressing. NOT the fat free kind.
Now splash on a bunch of balsamic vinegar -- about 1/4 cup total
Bake at 350 for about 50 minutes.
The sugar in the dressing packet caramelizes the garlic and the balsamic vinegar adds a great flavor.

I just made a wonderful pork chop dish last night from Don Mauer's Lean and Loving It. Fancy One Pan Pork Chops with Seasoned Rice...it was delicious! The only thing I did differently was add more garlic and sprinkled the pork with herbs de provence before pan frying.

This is my favorite quick pork chop recipe - great if you didn't marinate the night before (I never think that far ahead :o )
Barbecued Pork Chops
--------------------------------------------------------------------------------
Ingredients
Sauce:
1/4 cup packed brown sugar
1/4 cup ketchup
1 tablespoon Worcestershire sauce
1 tablespoon low-sodium soy sauce
Remaining ingredients:
6 (6-ounce) bone-in center-cut pork chops (about 1/2 inch thick)
1 teaspoon dried thyme
1 teaspoon garlic salt
1/4 teaspoon ground red pepper
Cooking spray
Directions
Prepare grill or broiler.
To prepare sauce, combine the first 4 ingredients in a small bowl. Place 1/4 cup sauce in a small bowl, and set aside.
Trim fat from pork. Combine the thyme, garlic salt, and pepper; sprinkle over pork. Place pork on a grill rack or broiler pan coated with cooking spray; cook 6 minutes on each side, basting with remaining sauce. Serve pork chops with reserved 1/4 cup sauce.

Carolyn: I have made this recipe using chicken. It is wonderful! After posting it, I decided to make it for dinner tonight. YUM! It is really flavorful. Just be careful about the pinch of cayenne. I really mean a pinch! Hope you enjoy it!

Patti- I made these tonight and they were really good. My DH liked them too. Next time I'll cut the worchestire sauce in 1/2. I never used so much worchestire sauce in one recipe and it was too much. Usually with me the more sauce the better. It might have been Ok if I made it with noodles or rice but I did the potatoes.
Also it could have been that I only made 4 chops. How many chops do you make when you do this recipe?

For Deb:
Roasted Pork Chops with Red Potatoes
4 tablespoons olive oil
4 boneless pork chops
4 tablespoons flour
2 tablespoons Creole seasoning
8 red potatoes, cut in 1/2 inch slices
4 cloves garlic, minced
1 cup chicken broth
1/2 teaspoon black pepper
Heat olive oil in large skillet over medium high heat.
Sprinkle the chops with Creole seasoning and then flour.
Add to the hot pan. Fry for a few minutes on each side, until nicely browned.
Sprinkle the prepared potatoes with a little Creole seasoning nd pepper and add to the pan.
Add garlic. Toss to coat with the oil and garlic.
Fry for just a few minutes, then remove everything to a baking dish.
Drain off any excess oil. Deglaze the skillet wiht the chicken broth, scraping bits off the bottom.
Bring to boil, then pour the liquid over the chops and potatoes.
Bake for about 45 minutes depending on the thickeness of the chops.
I just use a cast iron skillet and put it directly into the oven. The chops and potatoes cook wonderfully in this mixture. Enjoy!

When I make the "Sticky Pork Chops" I usually cook 4 chops. 2 for each of us. I don't normally pour the sticky sauce in the pan over the chops. You're right about that. It would be overpowering. I guess I wasn't too clear on the recipe. Sorry! I cook them and just use a spatula to put them on the plate. Sometimes, I'll use a little of the glaze to put over rice. Hope this works for you next time. I never alter the recipe as far as meaurements. I think if you just plate the chops the way I described you'll be happier with the results. Good Luck!

There are 2 we make alot. (we eat pork chops about once a week or once every 2 weeks).
One is sprinkled with flour, salt, pepper, garlic powder. Pan fry in butter until browned on each side. Add white wine (1/2 to 1 cup or so) & cook until pork chop is done & wine is gone.
The second one has a maple syrup & dijon mustard mix. It's then grilled. My DH does this one - so I don't know the recipe by heart - It's Kinky Friedman's though. I can get it if you want it.

I just got a Forman Grill for Xmas, and have tried it for a few things. It works best with BONELESS meats - the bone gets in the way with this grill. Anyway, I just preheat the grill for 5 minutes like the directions say, then put on boneless chops, about 3/4 inch thick, for about 5 minutes. They come out wonderful, tender and juicy. Don't be tempted to cook them too long, though. It's fast because both sides cook at once. Hamburgers and boneless chicken also work well. I find that sauces and marinades tend to really burn on the unit, so I just add them after the meat is cooked. Hope this helps!

Great! So boneless chops take about 5 minutes. That's a start. I do chicken and steak all the time, but I had absolutely no idea how to do chops. I rarely ever make pork chops for some reason but I'm going to start.
