I have some anchovy paste from about 2 months ago in my fridge. I am thinking of making a dijon vinaigrette. Do you think it is still ok, or should I have thrown it away about 1 month and 3 weeks ago??? Thanks!

Is the anchovy paste in a tube? How does it smell? (That's a silly question, now that I think about it :0 ) What does it look like? I would think that it would be ok, if it is in an oil base. I keep anchovy paste in the tube for over 6 months. Maybe I keep it too long? That brings up tomato paste in the tube? How long can you keep that? I checked the container and it doesn't mention shelf life. Good question!
I have kept anchovy paste in the tube in my cabinet for at least 2 years and used it. I really think it doesn't go bad, but I haven't killed anyone yet. So, you are surely safe with it till we get a scientific answer. Maybe someone could call one of the companies that makes it?
Try squirting a little out and discarding any that has changed color. My tube that never got used was almond paste.

Thanks for the advise, everyone. I smelled the tube and it smelled ok (as far as anchovy paste goes). Beth, I took your recommendation and squirted out a little before using some. Now, if no one hears from me for awhile, I guess it means the tube was bad! http://www.cookinglight.com/bbs/smile.gif
