View Full Version : Side dish for Pan Roasted Pork Loin with Leeks

Does anyone have an idea for side dishes with this? The recipe says 2 1/2 tbs. of leeks per person, which does not even sound like a large enough serving for a vegetable. Should I serve with some kind of potatoes and salad?? An extra veggy?? HELP!!

To me, Pork Tenderloin screams for risotto... ;)

I'd think of the leeks as carmelized onions -- something really yummy to have on your plate, but you probably wouldn't want to try to make a veggie serving out of it!! :)

Maybe you could try something dark green - the finished product doesn't have a ton of color to it. (I'm all about the aesthetics of food.) The roasted asparagus was pretty good, and broccoli is always a good choice. :)

I might also try a bread-type side -- risotto sounds pretty good, but since the pan is on top of the stove instead of in the oven, maybe you'll want to take advantage of the empty oven. Crusty bread, maybe?
