We just recieved a 7 pound ham as a gift and I was wondering if any of you have any great recipes for ham left overs. We can only take hot ham and ham sandwiches for so long.

Here's a great way to use just about any leftovers. You can use any cheese, any combination of spices/herbs and any veggies or meat that you have on hand. I made a combo recently using just bacon, fresh chives, and cheddar cheese. Simple but yummy.

To serve this to a crowd, you can pour the egg mixture into mini-muffin tins, fill to just below the rim and bake at 350º for about 15 minutes. Voilá, mini-frittatas in no time.

ZUCCHINI FRITTATA

2 tablespoons salad oil
1 small onion, finely chopped
1 clove garlic, minced or pressed
1 medium zucchini, coarsely chopped
2 large Swiss chard leaves (including stems), coarsely chopped
6 eggs
1/8 teaspoon pepper
1/4 teaspoon EACH dry basil and oregano leaves
1 cup (3 ounces) grated Parmesan cheese

1. Heat oil in a wide frying pan over medium-high heat. Add onion, garlic, chard and zucchini; cook, stirring occasionally, until vegetables are soft (about 5 minutes). Remove from heat, let cool slightly.

2. Beat eggs lightly with pepper, basil, and oregano. Stir in cheese and vegetables. Pour into a greased 9-inch pie pan. Bake in a 350 degree oven for 25 to 30 minutes or until puffed and browned. Serve hot or at room temperature.

Made a pretty good Ham Tetrazzini from the CL Complete cookbook last night. The recipe follows. It tasted pretty good, but (in the words of Emeril) maybe needed to be "kicked up a notch" Next time I think I'll add a little extra dry sherry and some extra spices (BAM!) http://www.cookinglight.com/bbs/smile.gif

Ham Tetrazzini

1/4 cup all-purpose flour
1 cup low-salt chicken broth
1 cup 2% reduced-fat milk
1/4 teaspoon black pepper
1 tablespoon stick margarine or butter
2 cups sliced mushrooms
1/2 cup diced green bell pepper
3 cups hot cooked wide egg noodles (about 5 ounces uncooked pasta)
1 cup cubed cooked ham (such as Light and Lean)
1/3 cup grated Parmesan cheese
1 tablespoon dry sherry
1/3 cup dry breadcrumbs

Preheat oven to 450º.

Place flour in a bowl; add broth, milk, and pepper. Stir the flour mixture well with a whisk.

Melt margarine in a nonstick skillet over medium-high heat. Add mushrooms and bell pepper; sauté 3 minutes. Add flour mixture. Cook 2 minutes or until thick and bubbly; stir constantly. Combine sauce, noodles, ham, cheese, and sherry in a 1 1/2-quart casserole or 10-inch round gratin dish; sprinkle with breadcrumbs. Bake at 450º for 10 minutes or until bubbly.

Serving Size: 1 cup

Here is one that I have used for years and always use with leftover ham or go out a buy it to make it - great flavor:

Ham Casserole

1/3 cup oil (I use olive oil)
1 cup chopped onion
3/4 cup green pepper
3/4 cup uncooked long grain rice
1 - 28 oz. can tomatoes
2 cups diced ham
1 can pitted ripe olives (drained)
salt, pepper, garlic powder and a bay leaf

Put all in 2 quart casserole - cover and bake 350 x 1 hour and 15 minutes - stirring occasionally - it's a really good one pot meal!

My favorite thing to do with ham leftovers (I even like this better than the ham the first time around) is scalloped potatoes with ham.... Just add ham into the layers of your scalloped potatoes and eat it as a meal. Also, look up the ham and cheese baked potatoes recipe from a few months back. It's so simple and really good!

Another good use for leftover ham is in a bean soup. I don't have a recipe--one of those things I learned from my mother. Anyway, a basic navy bean soup with bits of ham added and a warm roll or cornbread muffin makes a great cold weather meal.
