View Full Version : Best Oatmeal Cookie recipe???

I had an oatmeal cookie at W. W. Cousins last week that I thought was better than the ones I had been making for years so now I am looking for a better mousetrap (recipe).

Can anyone help? I searched the recipe finder and came up with two. They have to be light because of my husband's LDL/HDL ratio. TIA!

Here's a recipe my aunt gave me at the beginning of the low-fat craze. The grape nuts may seem wierd, but they add a nice texture and a bit of crunch -- so much less calorie-laden than using real nuts. They're so delicious, and very light...they last only days with my family after I make them.

Mix in large bowl:
1 c. all-purpose flour
1 c. quick oats
1/2 c. sugar
1/2 t.salt
1/2 t. baking powder
1/2 t. baking soda
1/3 c. grape nuts

Mix in medium bowl:
1/2 t. cinnamon
2 egg whites
1/3 c. light corn syrup
1 t. vanilla
1/2 c. raisins

Combine the two mixtures with a spoon; don't worry if the batter becomes a little hard to stir -- it should. Just keep mixing until it's all blended.
Drop by tablespoon onto a baking sheet coated in cooking spray, bake for 8-10 minutes at 375.
Some tips: Make sure you watch the cookies; if you like them gooey and chewy, and your oven cooks on the hot side, 7 minutes may be enough.
Wait a minute or two to remove from the baking sheet; otherwise you might mash them.

I recently found this one which is the best I found so far....but its not low-fat. I have made these twice now for different occasions and everyone raves for them. I have made them just as cookies and as the recipe describes as Whoopie pies (sandwiched with frosting).....yummmmm

OATMEAL WHOOPIE PIES

Amount Measure Ingredient -- Preparation Method

2 cups dark brown sugar
3/4 cup butter
2 eggs
1/2 teaspoon salt
1 teaspoon ground cinnamon
1 teaspoon baking powder
3 tablespoons boiling water
1 teaspoon baking soda
2 1/2 cups all-purpose flour
2 cups quick cooking oats
1 egg white
2 tablespoons milk
1 teaspoon vanilla extract
2 cups powdered sugar
3/4 cup shortening

1. Preheat oven to 350 degrees F. Lightly grease baking sheets.

2. Cream butter or margarine with the brown sugar until light and fluffy. Beat in the eggs and mix well. Stir in the salt, cinnamon, baking powder, boiling water, baking soda and flour. Mix to combine. Stir in the oats.

3. Drop cookies onto the prepared cookie sheets. Bake at 350 degrees F for 10-12 minutes. Let cookies cool, then make sandwiches from the two cookies filled with the whoopie pie filling.

Note: I have also added raisins, about 1 cup.

To make filling:

Beat egg white. Mix in the milk, 1 teaspoon vanilla and 1 cup powdered sugar. Beat in the shortening and remaining 1 cup powdered sugar. Beat until light.

The Neiman Marcus cookie recipe is really good & has oats in it. (The one that floated around eveyone's email for a while.)

Oh, boy is my mouth watering. My favorite cookie. I found the following recipe this summer (not low fat, but it has ALL of my very favorite things in it--oatmeal, brown sugar, cinnamon, molasses, coconut and raisins. I think I've also thrown in some walnuts. I don't dare make them very often because it is just my husband, who is not crazy about sweets, and me, so you know who eats them all. The molasses really gives them a deep, rich taste.

Rosie's Oatmeal Raisin Molasses Cookies

3/4 cup all-purpose flour
3/4 teaspoon baking soda
3/4 teaspoon ground cinnamon
1/2 teaspoon salt
8 1/2 tablespoons unsalted butter -- room temperature (1 stick+1 1/2 teaspoons
1/3 cup + 2 tablespoons light brown sugar -- lightly packed
7 tablespoons granulated sugar
1 tablespoon + 1 teaspoon molasses
2 1/4 teaspoons water
1/2 teaspoon pure vanilla extract
1 large egg
2 cups + 1 tablespoon rolled oats
1/2 cup shredded sweetened coconut
1/2 cup + 2 tablespoons raisins

Preheat the oven to 375º. Line several baking sheets with parchment paper, or lightly grease them with vegetable oil.

Sift the flour, baking soda, cinnamon, and salt together into a small bowl and set aside.

Using an electric mixer on medium speed, cream the butter, both sugars, the molasses, water, and vanilla together in a medium-size bowl until light and fluffy, about 1 1/2 minutes. Stop the mixer twice during the process to scrape the bowl with a rubber spatula.

Add the egg and mix on medium-low speed to incorporate it, about 20 seconds.

Add the flour mixture and mix on medium-low speed for 10 seconds. Scrape the bowl, then mix until blended, about 5 seconds more, Scrape the bowl.

Add the oats and mix for several seconds on low speed to blend them in. Add the coconut and raisins and mix until blended.

Drop the dough by heaping tablespoons about 2 inches apart onto the prepared baking sheets.

Bake the cookies until they are golden around the edges and lighter in the center, 12-14 minutes. Cook them on the baking sheet.

If you plan to snack on them the first day, place the cookies on a plate or simply leave them on the baking sheet. After that, layer the cookies in an air-tight container, using plastic wrap, parchment, or waxed paper between the layers, and store the container in the freezer for up to 2 weeks. Bring the cookies to room temperature before eating.

What great timing--I was just thinking of making oatmeal cookies and was wondering where I could find a really good, low-fat recipe. And I love Grape Nuts and always have some in the cupboard, so this is something I can make right away! Thanks for the recipe idea!

P.S. Just saw the "whoopie pies" recipe... will have to try that next!

I made Emilycat's recipe above (the one w/the Grape Nuts) over the weekend. They were great! I ended up making them twice and they got great reviews from the 8 other people who helped eat them. Thanks for the yummy post!

Here are two of my favorites from our files..Enjoy!!

Giant Oatmeal Drop Cookies

INGREDIENTS FOR 15 SERVINGS:
1 cup packed dark brown sugar
2 tablespoons butter or stick margarine, softened
1/2 cup applesauce
1 large egg
1-1/2 cups all-purpose flour
1-1/2 cups regular oats
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/4 teaspoon salt
1/2 cup raisins
1/2 cup chopped walnuts
1-1/2 teaspoons vanilla extract
Cooking spray

INSTRUCTIONS:
1. Preheat oven to 350 degrees.

2. Beat sugar and butter at medium speed of a mixer until well-blended (about 5 minutes). Add applesauce and egg; beat well. Lightly spoon flour into dry measuring cups; level with a knife. Combine flour, oats, soda, cinnamon, and salt. Add flour mixture to
sugar mixture; beat at low speed until well-blended. Stir in raisins, walnuts, and vanilla. Using 3 level tablespoons per cookie, drop dough 2 inches apart onto baking sheets coated with cooking spray; flatten slightly. Bake at 350 degrees for 10 to 15 minutes. Remove cookies from pans; cool on wire racks. Yield: 15 cookies (serving size: 1 cookie).

1 large egg
1 cup all-purpose flour
1 cup regular oats
1/2 cup raisins
Cooking spray

INSTRUCTIONS:
1. Preheat oven to 350 degrees.

2. Beat first 6 ingredients at medium speed of a mixer until light and fluffy. Lightly spoon flour into a dry measuring cup, and level
with a knife. Add flour and oats to egg mixture; beat until blended. Stir in raisins. Drop by level tablespoons 2 inches apart onto baking sheets coated with cooking spray. Bake at 350 degrees for 15 minutes or until golden brown. Cool on pan for 3 minutes. Remove cookies from pan; cool on wire racks. Yield: 2 dozen (serving size: 1 cookie).

I'm so glad you liked the cookies! I'm always glad to share recipes...I usually cook for only myself, and sometimes my boyfriend (who is always very complimentary, bless his heart, even if he isn't extremely fond of some of my experiments), so it's nice to help someone else out in the kitchen!

This is another vote for emilycat's no fat oatmeal cookies. This is the new recipe for oatmeal cookies in my household! Everyone's got to try these.
