Thought I'd share a recipe I made tonight (I get sooo many here, I think it's my turn :o )
This is from the book "Curries" by Vicki Liley
Fish and Tomato Curry
Spice mixture:
2 TBs. veg. oil
1 onion, finely sliced
3 cloves garlic, finely chopped (I minced with press)
1 tsp. peeled and grated fresh ginger
1/2 tsp. ground turmeric
1 tsp. ground cumin
2 tsp. ground coriander
1 tsp. garam masala
1/2 tsp. chili powder (I used 1/4 or DH would not eat it :p )
1 lb. white fish fillets, cut into 2-inch pieces (I used mahi-mahi)
13 oz. canned chopped tomatoes
1 tsp. sea salt
1 tsp. sugar
2 Tbs. fresh cilantro leaves for garnish
lemon wedges for serving (I skipped this )
In a Wok or large skillet, heat oil over med. heat and stir-fry spice mixture for about 3 minutes or till fragrant.
Add fish, tomatoes with the juice, salt, and sugar. Reduce heat to low, cover and simmer, stirring occasionally until fish is opaque througout (about 8-10 minutes).
Sprinkle with cilantro and serve with lemon wedges and steamed basmati rice.
Serves 4
(I served with hot peppered green beans too)...
