Hi, everyone -

After enduring a disappointing curry noodle recipe, I've regrouped my confidence dust and opted to try again. I found the receipt below (Thai Coconut Noodles) using the Recipe Search, but couldn't locate any helpful comments on the board.

Anyone?

Ingredients
2 cups snow peas, trimmed (about 8 ounces)
1 (8-ounce) package rice sticks
1 teaspoon dark sesame oil
1/2 cup chopped green onions
1-1/2 tablespoons minced peeled fresh ginger
2 garlic cloves, minced
1/2 cup light coconut milk (such as Hokan)
1/2 cup water
1/4 cup tomato paste
1-1/2 teaspoons curry powder
1/2 teaspoon salt
Dash of ground red pepper
1/4 cup minced fresh cilantro


Directions
Prep Time: 10 minutes
Cooking Time: 25 minutes

Cook snow peas and rice sticks in boiling water 3 minutes. Drain well.

Heat oil in a large nonstick skillet over medium heat. Add onions, ginger, and garlic, and saute 2 minutes. Stir in milk and next 5 ingredients (milk through red pepper); bring to a boil. Cover; reduce heat, and simmer 5 minutes, stirring frequently. Combine snow peas, rice sticks, and green onion mixture in a large bowl, and sprinkle with cilantro.

I have made these. It has been a while so I had to look up the recipe to see what I noted about it. My notes say that we thought it was excellent.

Hope this isn't too late...just wanted to add a word of warning about the noodles. If you are using wide rice noodles (which are a little wider than fettuccine), then cooking them for 3 minutes should be fine. BUT...if you are using bean thread noodles (which I think might sometimes be called rice stick noodles) then I would only soak them for about 10 minutes in water that is hot (but not actually on the burner). The bean thread noodles are VERY thin - sort of like angel hair. I'm adding this only because the first time I made this recipe I overcooked the noodles and the whole dish became mush. The SECOND time I was more careful and the dish came out beautifully. Mostly, I would pay careful attention to the package directions (and some asian noodles offer different cooking/soaking directions depending on how the noodles will be used, so beware of that).

Oh and BTW...it's a really yummy dish -- definitely make it!
