View Full Version : Help Me!! I'm Dreaming of Pitas

I need the help of all of you wonderfully talented people. Last night I had a dream about a wonderful dinner that I made, it tasted awesome in the dream.(you know its bad when your brain never stops thinking about food) We had greek salad with a bready pita filled with something that had a greek/mediteraen (spelling?) feel to it.

Now I am dying to have greek salad and stuffed pitas. Does anyone have any recommendations as to what I could stuff them with?? Especially something that would be good with greek salad?

The following combination is simply delicious -- and quite "Greek":

Marinated chicken breast strips (lemon juice, garlic and oregano)
Red bell peppers and onions, roasted under your broiler

Sauce: sour cream (or yogurt), feta cheese and dill

Stuff pitas with chicken/veggie mixture and
sauce... or wrap mixture in Mediterranean flatbread.

It's completely scrumptious, low-fat and extremely delicious. One of my husband's favorite wraps.

How about greek olives, yellow bell peppers, red onion, feta cheese, red or green leaf lettuce, toped with some sort of yogurt dill sauce, or just greek salad dressing. Yummy, that sounds good.

Thanks Lorilei and Mandy!! I have added those items to my grocery list and just by visualizing I am sure they will be exactly what I am craving. I really like Lorilei's idea of the Mediterranean flat bread and I like Mandy's idea of Red Onions and greek olives, yummy!

By the way Lorilei, I went back to my double post and corrected it, now I dont feel like a complete fool. Thanks....

How about the ful medammes from the October 2000 issue, p. 111? I've been making this regularly, and it's delicious stuffed into pitas. Oh, and it's good made with any kind of beans, not just favas.

Terri-Lynn, I had greek salads and pita's filled with hummus at least once a day when I was pregnant. Now you are dreaming about them, hmmmmmmmmm.

I fill out my pita with the followings:

romaine lettuce
tomatoes
cucumbers
red onions
feta cheese

olive oil
basalmic vinegar
dried oregano
salt & pepper

It is so good and healthy.

Hummus with chopped onions, kalmatra olives is one of my favorite. THere are so many different flavors of hummus in the stores if you don't like it plain.

Greek Lentil & Olive Salad

3 Tbsp olive oil
2 Tbsp lemon juice
1/2 tsp anchovy paste
1/2 tsp pepper
1 1/2 cups cooked green lentils, drained and rinsed (or one 19oz can)
1/4 cup oil-cured black olives, pitted and coarsely chopped
3 Tbsp chopped fresh oregano or parsley

In large bowl, whisk together oil, lemon juice, anchovy paste and pepper. Stir in lentils, olives and oregano. Cover and let stand for 1 hour. Makes 2 cups

Good suggestion Phoebe, I will try that one day soon. I am trying to be more conscious of making meatless meals throughout the week.

Bijoux22 I laughed so hard when I read your post (thank goodness my name isnt Susan, with 3 of them expecting on the BB). I have had alot of cravings lately I am hoping it is the onset of fall, not the onset of another baby (I have a 5 month old and a 32 month old).

There is a great recipe for greek salad that I have made often that would be good in pitas. I found it in The Best of Cooking Light-special cookbook edition (a paperback)from about a year ago. It's called Greek Salad with Feta and Olives on page 64 and there is even a great color photo!

the Olive Pizza from the Nov 2000 issue will give you your olive/feta/tomato fix. this is a wonderful dish that is very fast and everyone thinks you slaved over a homemade crust!
