View Full Version : ISO Spinach Squares Recipe

I was at a party recently and they offered Spinach Squares and they were totally yummy! It was egg based w/spinach, cheese and a bread crumby crust. I would love to bring these to a Halloween party that's coming up, does anyone have a recipe?? Thank you in advance!!!!!

I have the following one and there is one from CL but more of a side dish or possibly even a main dish - here is the square one:

Spinach cheese Cocktail Bites

4 Tbsp. butter
3 eggs
1 cup flour
1 cup milk
1 tsp. salt
1 tsp. baking powder
1 tbsp. dijon mustard
dash of cayenne pepper
1/4 cup chives, chopped
1 pound Edam cheese grated
1 pkgs frozen chopped thawed, well drained spinach

Preheat oven to 350. In a 9 x 13 cakepan, melt butter in the oven. In a large mixing bowl, beat eggs; add flour, milk, baking powder, salt, mustard, cayenne and chives. Blend well, Fold in cheese and spinach. Pour into pan on top of butter and bake for 35 minutes or until almost set in centre. Allow to sit for about 15 minutes, cut into bite-sized squares and serve warm. These may also be frozen after baking and reheated in a 350 oven for 15 - 20 minutes. Makes about 10 dozen.

Thanks for the recipe lanie! I did some searching and found a similiar recipe for Artichoke Squares, I think I'm gonna try both of them! Here's the recipe I found:

Artichoke Squares

2 Tbls. olive oil
1/3 cup minced onion
2-3 cloves garlic, minced
4 eggs
14 oz can artichoke hearts, drained, trimmed, and chopped
1/4 cup dry bread crumbs
1/2 lb Swiss or sharp Cheddar cheese
2 tsp dry or 2 Tbls. fresh minced parsley
1/4 tsp oregano
1/2 tsp salt
Pepper
dash Tabasco

Instructions: Heat oil in skillet, and saute onion and garlic until soft and translucent but not brown. Beat eggs in bowl; add chopped artichoke hearts. Stir in rest of ingredients. Pour into 7 x 11 baking dish. Bake 25-30 min. at 325 degrees until set. Let cool before cutting into squares.

if you do a search for "interesting party food" or something to that effect there is a really good recipe for spinach balls that was posted june or july.

My cousin actually makes the spinach balls and she's bringing them to the party! They are so good! Thanks for the suggestion though!!

Here are a couple:
English Crabbies

pkg. of english muffins split in half
1 small jar cheez whiz
1 can crab meat (drained and sorted through)
1/2 cup butter ( or less)
2 tsp. mayo
garlic salt/power to taste

Mix above - spread on english muffin halves - place on cookie tray and freeze - then bag for whenever - then - take out what you want - cut each half muffin into six triangles or four - bake 400 X 10 min.

They are also just good baked whole - but yield a lot when cut up for snacks.

English Muffins again split
1/2 lb. shredded cheddar cheese
6 slices bacon, fried crisp and crumbled
1 - 4 oz. pkg. slivered almonds
1 onion finely chopped
1 cup mayo
salt and pepper to taste

mix all (except muffins of course) and spread on halves and freeze as above - bag - cut up while still a little frozen - (easier to cut - same with above) and Bake 400 x 10 min.

They are both easy and really good hors d'oeuvres

I made the spinach squares for a party Friday along with the toasted ravioli (recipe from another post). Thanks for the recipes, they turned out wonderful.
