View Full Version : Q re: White Bean Salad with Shrimp & Asparagus

Just reading through the April CL, and noticed that this recipe (on p. 105) calls for "1/2 cup chopped Vidalia green onions". Is this a typo, or is there such a thing? I assume I would substitute regular green onions?

i just saw these at the store last week and yes, i had to do a double take :eek: they were sold near the scallions and looked like those onions with the little bulb at the bottom and the long green stems- only bigger! and they were labeled vidalia green onions! i'm going to buy some today- what great timing to know there is a recipe for them! :)

I couldn't find them here today so I'm subbing regular green onions. I don't think it'll be a huge deal, since scallions are pretty mild anyway.

I made this salad on Friday night. I was unable to find vidalia green onions, so I substituted regular green onions. Overall, the salad was good but not spectacular IMHO. My criticism is that it was on the bland side. The bacon did kick up the flavor a notch, so don't leave it out if you try it. An OK salad but not a keeper in my house.

This is good to know. I realized after doing the grocery shopping and menu planning that I have to be on a liquid diet all day Wednesday and Easter is on Sunday, so I have to kick something out of the lineup and I was having a hard time deciding what not to make. It will be this. The shrimp was already frozen, so I'll keep it that way and just use the asparagus i bought as a green vegetable side dish. Thanks for the review on this one.

I'm a little late to this post, but I just want to agree with Peggy on this salad. Nothing special considering the number of pans, the amount of chopping, and general mess it creates. I guess I should have done the search before I made the recipe :) . Although, maybe if I'd found some vidalia onions it would have been amazing...
