You can use what ever cheese you like, i used a mexican mix one.


Farmer's Casserole

SOURCE: Better Homes and Gardens
YEAR: February PAGE: 208
INGREDIENTS FOR 6 SERVINGS:

3 cups frozen shredded hash brown potatoes
3/4 cup shredded Monterey Jack cheese with jalapeno peppers or shredded cheddar cheese (3 ounces)
1 cup diced fully cooked ham or Canadian bacon
1/4 cup sliced green onions
4 beaten eggs or 1 cup egg substitue
1 (12-ounce) can evaporated skim milk
1/4 tsp. pepper
1/8 tsp. salt
INSTRUCTIONS:
Grease a 2 quart square baking dish. Arrange potatoes evenly in the bottom of
the dish. Sprinkle with cheese, ham and green onion.
In a medium mixing bowl, combine eggs, milk, pepper and salt. Pour egg
mixture over potato mixture ini dish (The dish may be covered and refrigerated
at this point for several hours or overnight.) Bake, uncovered, in a 350º
oven for 40 to 45 minutes (or 55 to 60 minutes if made ahead and chilled) or
till center appears set. Let stand 5 minutes before serving.
Yield: 6 servings

and it was GOOD!!!

I made it in a 9x13 pan, and doubled the ing. so we could have leftovers tomorrow! lol

This was very good! Its alot like a quiche (which i cannot make!)

I will make this again!

I made the farmer's casserole Saturday night and served it Sunday morning.
It was delicious!
Here are some comments that may be helpful to others--since I refridgerated it overnight, I baked it for an hour. After this time, the eggs looked set, however it was still a little watery in the middle. By the time we served it (maybe about 15 min later) the water was gone.
I used the refridgerated hash browns instead of the frozen.
Also...there were four of us and we ate the whole thing. If you were feeding 6, I'd recommend adding an extra egg or two and a handful more potatoes, cheese, bacon/ham.
I used cheddar cheese. Next time I'm going to try the pepper jack cheese and maybe serve salsa on the side.
This was very easy and my family loved it!

I made the farmer's casserole this weekend and it was wonderful!!! Thanks for everyone's input. Definitely a keeper!! I used the pepper jack cheese and liked that. LaurieC

It was a Farmer's Casserole weekend! I made mine up with the cheddar cheese Saturday night and baked it Sunday morning. Easy and great! I think I'm going to try making it ahead and then freezing it like I do quiches and see how that turns out.
