Thank you Gail for the great recipe for the lobster ravioli. I served it last night to guests and it went over very well. I used the lobster ravioli with roasted tomato cream sauce recipe.

Thank you Ralph for your suggestion to use wonton wrappers for the ravioli. They were very easy to work with, none exploded and the pasta was very light and delicate for the lobster ravioli.

Glad all turned out well!
Oh, & one other suggestion. If you end up w/extra wrappers, cover them with a wet paper towel, put them in a ziplock bag, & you can freeze them, perhaps indefinitely. (I just don't know for how long! The ones I just used had to have been in the freezer for SEVERAL months & they were fine.) Defrost them overnight in the fridge.
