Hi Karen,
I'm thinking about making this for Passover thanks to your raves about it. My one question (which may be a dumb one so excuse me:o ) is....when it says "1 cup oil" do you just use vegetable oil? Just checking cause I don't want to mess this great cake up at all!

Oops...I have one more question....what type of apples did you use? Also, here's the recipe in case anyone else is interested.
Apple Cake
3/4c. sugar
2t. cinnamon
juice of 1 lemon
5 or 6 apples, peeled and sliced
6 eggs
2c. sugar
1c. oil
2c. matzo cake meal
2t. potato starch
dash salt
1/2c. sugar
2t. cinnamon
1/4c. nuts
Combine 3/4c. sugar, cinnamon, lemon juice, and apples. Set aside. For cake batter; beat together eggs, 2c. sugar, and oil. Sift together matzo meal, potato starch, and salt. Combine dry ingredients with egg mixture. For topping; combine 1/2c. sugar, cinnamon, and nuts. Set aside. Pour half the cake batter into greased 9x13 inch pan. Spread with apple mixture. Top with remaining batter. Sprinkle with topping. Bake 350 65-70 min.
As I recall the first square was difficult to get out(fell apart a little), but the rest came out O.K. The flavor was really good, though, and very moist. Let me know if you try it!

I used canola oil (It is not a light cake!!!), and with regard to the apples, I do not recall what I used last year, but if I had to guess I would say Granny Smith since I often have these in my fridge. You could use any apples that are suitable for cooking e.g. braeburn, gala, granny smith etc... Just stay away from red delicious. They don't do well in bakery. Let me know how you like it!

Thanks, Karen! Do you know if you can use vegetable interchangeably for canola oil or will it change the taste? Also, did you really squeeze an entire lemon for the lemon juice? Sorry to ask so many questions. I appreciate your help!

I'm sure vegetable oil would work fine, and YES, I really did use all of the juice from 1 lemon. It really is not that much , maybe 2-3 Tbsp. Hope that helps.
