Hooray! Since I'm usually one of the last people to get my copy, I was so happy yesterday to come home from work and find the Nov Issue in my mailbox!

I'm making the cover recipe this weekend--it looks yummy!

Kentgirl-did you make the pecan tassies? I just got my magazine yesterday, so I am curious how they turned out!

Susann---I haven't made them yet. I just bought all the ingredients and I plan on making them tonight. I'll let you know how they turn out.

I did make the Black Bean and Corn Salad, which I thought was really good. And the Fudgy Souffle Cake with Warm Turtle Sauce is "awesome"!!

Oh my!! Those tassies are so good. Yum! But please...a serving is ONE dinky little thing! I think not :-) Also I found it impossible to get 24 little balls of dough. I think mine made 17 and that was a stretch but they sure were good! Easy too! Now I am trying to think of other things to use as "filling" for those yummy little crusts...cherry pie filling maybe, drizzled with a little melted chocolate...any other ideas here??

How about the butterscotch with berries recipe also from the November issue? I haven't tried it yet, but it looks so good!

I made the Pecan Tassies in Cream Cheese Pastry last night, and they were delicious! The crust was wonderful---I couldn't eat just one! Simple to make--this one is definitely a keeper!

I marked so many recipes to try in this issue. The White Chocolate-Apricot Muffins sound good, but what is "crystallized ginger"?

And speaking of muffins.....I lost a favorite recipe for muffins called "Zucchini-Lemon Muffins". According to the CL Index, the recipe was in the June '95 issue, pg. 123. Does anybody have that issue and can you post the recipe. These muffins are so light and yummy--I'd like to make them again.

Zucchini Lemon muffins

Recipe By :
Serving Size : 0 Preparation Time :0:00
Categories : Muffins

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
2 c flour
1/2 c sugar
1 tab baking powder
2 tsp lemon rind
1/4 tsp salt
1/4 tsp ground nutmeg
1 c coarsely shredded zucchini
3/4 c skim milk
3 tab veg oil
1 large egg
cooking spray

Combine first 6 ing in a bowl & make a well in the center. Combine zucchini, milk, oil
and egg; stir well. Add to flour mixture and stir just until combined
Divide batter among 12 muffin cups coated with cooking spray. Bake 400 for 20 minutes or until golden. Remove from pans inmediately and let cool on wire rack.

I've been searching for a recipe for zucchini bread, and haven't found one thus far, but I wondered if the muffin recipe you just listed would work in a loaf pan..What do you think?

I got my November issue in the mail this weekend and I can't wait to start cooking. For all the BB junkies, does anyone see a connection with what is in this issue and what has been on the board lately? There was that section on freezing food, and how long things stay good in the fridge and freezer. They also had that section on quick breads, which has been a hot topic (I'm thinking Lorilea's "Give me your muffins" thread). All of the articles this month seemed quite relevant to what we've been discussing at our BB kitchen table!

I don't have my magazine yet, so I don't know if this is appropriate, but a friend of the family always fills tiny pie crusts with a jazzed-up pudding pie mixture.... Vanilla pudding with a bit of almond extract and chocolate with a bit of instant coffee.... They look pretty (she often puts a raspberry on the chocolate one) and dainty and are so easy to make. I think she uses the frozen tartlets. Beautiful at bridal showers...

You might try this with the crust recipe.

Thanks Mamasue for the muffin recipe. I'm more organized now with my recipes, so I won't lose this one again!

emilycat, the recipe for Zucchini Lemon muffins make delcious light and fluffy muffins. But I've never tried them in a loaf pan, but I don't think it would work. It just doesn't seem to be a "loaf" recipe.

The only zucchini bread recipe I know is loaded with fat grams and calories. It's the best I've tasted, but maybe I should have Cooking Light "lighten" it up!

christinew--I'm on a break at work right now, so I don't have the magazine with me. Hopefully someone else can answer your question. If not, I'll post again tonight when I get home.
