I just tried the peanutty noodles tonight and liked them. However, I have an old Cooking Light recipe that is similar that I think I prefer. Has anyone else tried both? What do you think?
Here's the old recipe. I'm not sure what month/year it's from. I usually add shrimp to this.
Udon Noodle with Asian Vegetables and Peanut Sauce
4 servings
6 Tb. water
1/4 c. reduced fat creamy peanut butter
2Tb. brown sugar
2Tb. low sodium soy sauce
2Tb. rice vinegar
1 1/2 tsp. minced peeled fresh ginger
1 1/2 tsp. dark sesame oil
1/2 tsp. cornstarch
1 tsp. chile paste with garlic
2 garlic cloves, minced
8 oz. uncooked udon noodles or spaghetti
4 cups sliced bok choy
2 cups snow peas, halved crosswise
1 cup shredded carrot
-Combine first 10 ingredients in a small saucepan; stir with a whisk until blended. Bring to a boil. Cook one minute, stirring constantly. Set aside.
- Cook noodles in boiling water. Drain well. Combine noodles, peanut sauce, bok choy, snow peas, and carrots in a large bowl. Toss well to coat.
