When I subscribed to the new Eating Well Magazine they included a recipe explaining how to make yogurt cheese. I am wondering if anyone has tried the cheese and what other things can you make w/ it. Does it end up like cream cheese? If so, can it be substituted equally for cream cheese in recipes?

I made some once, and I could tell the difference between yogurt cheese and cream cheese...but they were still pretty close. You still get the yogurt "tang" , but it's not unpleasant.

It's my understanding that it can be used as a substitute in just about any recipe since it's also dairy. I could be wrong, but what else is new? :rolleyes:

I have made yogurt cheese. It is very easy to make, just keep draining the whey. It comes out dense like cream cheese. I can't remember its specific taste. I use it in place of cream cheese in my cheesecake. IMHO it tastes better than the original full-fat version. And for me, that is saying something!

Yes, you can use it in place of cream cheese in recipes. I have yet to try it for frosting, but I will on the lemomade cake and let you know. I will find the thread on my cheesecake and post it here, It also has the directions for making the cheese.

I haven't seen the issue, what are you planning on making?

One of my favorite cookbooks has a great recipe for a Creamy Salsa Dip that uses 1/2 cup salsa, 1/2 cup yogurt cheese, 1/4 tsp cumin, 1 Tbl lemon/lime juice, and skim milk as needed to thin the dip out to a consistency you like. You just mix everything but the lemon juice together and stir that in afterwards. It's a great twist on the normal chips and salsa.

I also substitute yoghurt or yo-cheese for sour cream in a lot of recipies. You have to be careful not to heat it too fast for sauces or it curdles but I really like the flavor.

Thanks guys for all the great info and recipes. I've have some "dripping" in the frig now - can't wait to try it. akairo: the magazine is not out yet - still in the process of publishing. The recipe (for lemon yogurt cheesecake) was on-line after I went through the subscription process.
