:) Anyone have some good recommondations for either seafood or vegetarian recipes using pesto?

I've used pesto on pizza dough and mixed in a little tomato sauce, then topped it as I normally would.

I've also added some (small amounts) into omlettes...
and of course, the traditional pasta--where you can make it vegetarian or add seafood....

Easy Pesto Salmon

Recipe By :

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
2 cups spinach leaves
1/2 cup basil leaves
1/4 cup fat-free chicken broth
1 tablespoon olive oil
1/4 teaspoon salt
3 garlic cloves -- peeled
Cooking spray
2 salmon fillets -- (6-ounce) skinned
2/3 cup hot cooked brown rice

1. Preheat oven to 400º.

2. Place the first 6 ingredients in a food processor or blender, and process until smooth. Spoon 3 tablespoons pesto into bottom of an 8-inch square baking dish coated with cooking spray. Top with salmon fillets, and spread with the remaining pesto.

3. Bake at 400º for 20 minutes or until fish flakes easily when tested with a fork. Serve with rice. Yield: 2 servings (serving size: 1 salmon fillet and 1/3 cup rice).

I also use pesto on pizza. Sometimes alone but more often
with a little red sauce too. I love it with shrimp as a topping.

I like to mix pesto with a light or ff mayo and add chicken, granny smith apples, celery and red onion for a yummy salad. I also like to mix it with light cream cheese and a little green onion for a nice sandwich or bagel spread. My favorite is the classic pesto-pasta- shrimp combo. I saute shrimp with olive oil and garlic til the shrimp are done, add some chopped tomatoes, then toss it with pesto and spaghetti. Top with parmesan and you have a really great main dish in about 15 minutes!

Pesto potato salad... diced red potatoes, boiled, tossed with a pesto vinaigrette (thin pesto mixed with white wine vinegar) and halved cherry tomatoes.

I like pesto on pizza best when I drizzle it on right after the pizza comes out of the oven... that way the flavor stays garden fresh.

Pesto mixed with mayonnaise makes a great sandwich spread.

Pesto tossed with linguine, pieces of cooked red potato, and green beans

Broiled eggplant rounds spread with pesto, topped with sliced tomato and mozzerella, and returned to the oven til the cheese melts

Pesto pureed with a can of drained white beans... use as a sandwich filling or a dip

Sorry that these aren't real recipes! Just ideas... things that I throw together in my own kitchen using my frozen supply of last summer's pesto! :)

I have added it to plain yogurt and used it as a dip for veggies. It is awesome on pizza.

Another good thing to do is to take zucchini & carrots and use the vegetable peeler to make pasta like strands, cook for a few minutes in a pot of water until al dente and toss with pesto. Good stuff!:cool:

:) Thanks so very much for all your input! I'll be doing a lot of coying and pasting and printing...happily so. I love pesto, so the more ways in which I can use it, great.

One of my favorite sandwiches is a rosemary foccacia bread, with fresh mozzarella, roasted red peppers, and pesto. YUMMY! Just had it for lunch today.
