Hello- I made a batch of applesauce over the weekend and froze for later uses - Does anyone have any great ideas for recipes for me? I think there has been an applesauce snack cake mentioned recently. I'd love some advice. THanks!

HI. Try search there are several recipes using applesauce. Also you can use it on pork chops too, to lower fat in baking (muffins, cakes, breads).
In the Nov issue the Dried Fruit and walnut loaf uses applesauce also the applesauce raisin cake (nov issue).

Applesauce-Pecan Crumb Cake

11/2 cups all-purpose flour
1/2 cup packed brown sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon ground nutmeg
1/2 cup low-fat buttermilk
1/2 cup applesauce
1 tablespoon butter or stick margarine, melted
1 large egg
1 large egg white
Cooking spray
1/3 cup chopped pecans
1/3 cup all-purpose flour
1/4 cup packed brown sugar
2 teaspoons butter or stick margarine, melted
1/2 teaspoon ground cinnamon


Preheat oven to 350`. Lightly spoon flour into dry measuring cups; level with a knife. Combine flour and next 5 ingredients (flour through nutmeg) in a large bowl; make a well in center of mixture. Combine buttermilk, applesauce, 1 tablespoon butter, egg, and egg white in a bowl; add to flour mixture, stirring just until moist. Spoon batter into a 9-inch round cake pan coated with cooking spray. Combine pecans and remaining ingredients in a small bowl; stir with a fork until mixture resembles coarse meal. Sprinkle evenly over top of cake. Bake at 350` for 35 minutes or until a wooden pick inserted in center comes out clean.
Yield: 8 servings.

New Applesauce-Walnut Cake
(this could be either from B Appetit or Gourmet )

1/4 cup walnuts
1/2 cup light corn oil spread (1 stick)
3/4 cup sugar
2 1/2 cups all purpose flour
1 1/2 cups oats (quick cooking-uncooked)
1 -16 ounce jar of applesauce
1-8 ounce container plain non fat yogurt
1- 8 ounce container frozen no cholesterol egg substitute-thawed
1 tablespoon baking powder
1 1/2 teaspoon baking soda
1 teaspoon salt
1 teaspoon vanilla extract
1/4 teaspoon ground cinnamon
3 hours before serving or early in day
In a small saucepan over medium heat toast walnuts shaking saucepan frequently until they are lightly browned. Cool walnuts. Chop walnuts very fine and set aside.
Preheat oven to 350 and spray a 10 inch Bundt pan with non stick cooking spray.
In a large bowl with mixer at low speed beat the corn oil spread and sugar until blended. Increase the speed to high and beat until light and fluffy, about 5 minutes, scraping the bowl frequently with a rubber spatula. Reduce the speed to low and add flour, oats, applesauce, yogurt, egg substitute, baking powder, baking soda, salt, vanilla and cinnamon. Beat until well mixed, occasionally scraping bowl with spatula. Fold in the chopped walnuts and pour the batter into Bundt pan. Bake 45-50 minutes at 350 until toothpick inserted in center comes out clean. Cool the cake on wire rack 10 minutes. Remove cake from pan and cool completely on rack. Makes 16 servings.
Grandma’s Applesauce Cake (Mary Finly, CA) (Gourmet/10/95)

2 1/4 c flour
1 cup sugar
2 tsp. baking soda
1/2 tsp. salt
1 tsp. ground cloves
1 tsp.cinnamon
1/4 tsp. ground mace
1/4 tsp. nutmeg
1 tablespoon cornstarch
3 tablespoons cocoa powder
1 cup chopped walnuts
1 cup raisins
1 1/2 cups unsweetened applesauce
1 stick unsalted butter melted
Oven-325F. Line bottom of buttered loaf pan (9x5x2) with wax paper and butter paper. In a large bowl whisk together flour, sugar, soda, salt, spices, cornstarch and cocoa until combined well. Stir in remaining ingredients. Pour batter into prepared pan and bake in middle of oven 1 hr until tester comes out clean. Cool cake in pan on rack 15 minutes and invert on a plate to cool completely.

you could make the applesauce spiced cake with cream cheese topping with walnuts.

There is also a recipe called Apple 'n Spice Cake With Caramel Glaze on the CL Homepeage under BooFoods, looks really good.

Pennsylvania Dutch Apple Spoon Omelet

2 eggs
1/2 cup applesauce
1 tsp vanilla
1/4 tsp almond extract
1/4 tsp cinnamon
1 tbsp + 1 tsp sugar (or equivalent)

Preheat oven to 350 F. Combine all ingredinets in a small bowl. Stir well. Pour into small baking dish sprayed with Pam. Bake, uncovered, 35 minutes.

My DH and I love this for brunch. It claims to serve two but I make one for each of us. And I confess, I didn't have almond extract last weekend but didn't miss it. And I used a package of sweet and low instead of sugar. Don't use Equal when baking.
