View Full Version : Lemonade Layer Cake disaster

With Easter on Sunday and my daughter's birthday on 2 April, I decided to try the Lemonade Layer Cake from April issue. For one thing, I think it should be made in an 8-inch layer pans. I put a thin layer of frosting on bottom layer, built a slight ridge and used some of that Lemon Curd recipe (not a lot) someone mentioned in one of the posts. I made the Lemon Curd yesterday so that was totally chilled. I did everything to the letter. I remember now why I stopped making layer cakes. I'm going to have to say I didn't have time to make the cake (or some excuse). I can't blindfold them before they eat it. What a royal mess :( . I doubt very much if anything is left between the layers since so much squeezed out. The more I tried to smooth out the sides the more there seemed to be. I did not press down when frosting. I even frosted most of the top layer before putting it on bottom layer so that there was basically just the sides to frost. The frosting was chilled for at least an hour and the cake the totally cool. I hope no one else had the luck I had. BAD LUCK!!!

Yikes!!! I'm making this cake tomorrow. I had better read all of the threads regarding it before I give it a try!! Sorry it didn't work for you!:(

Good thing I used wax paper strips under edge around cake. I was disgusted with the look of the cake but I put it back in the fridge. My husband opened up the fridge but before he could open his mouth I told him "Don't you dare comment!". It had that spare tires look. I figured it would set more then I could try to repair it.
I just looked at it again and tried to smooth out the edges. It doesn't look as bad as it first did. There may be hope for the cake yet. Maybe I can turn out the lights and have only the light from the birthday candles. :rolleyes:
BTW, I did use the skewers to prevent layer from slipping.

The cake had the night to set again after the first repair job. This morning I did a final coat. It's amazing how different it looked from when I first frosted cake. Instead of a :( a :) appeared. The cake that started out as a disaster turned into a sweet and tangy success.
