I'm disabled, have limited strength, but love to entertain. I need recipes, in all catagories, that I can make ahead and freeze. Preferably Mediterranian cuisine, but don't let that stop you.

Melina, The baked Kibbeh can easily be made ahead and frozen. I don't know if you like them but grape leaves are another thing that can be frozen (although I must admit we rarely have any left to freeze) I have our family recipe for these if you would like me to post, however, it is not a light version. You can also use the same filling and stuff zuccini and cook in a tomato paste for a dish called Koosa. This, too, can be made ahead and frozen. Hope that helps. Let me know if you would like any of these recipes I would be glad to accomodate you, again they are family recipes and not lightened up. But perhaps with all the great minds on these BBs someone could offer up suggestions.

SandyDee,
Thanks for responding so qiuckly. I do have to use light recipes only. Otherwise, because of lack of exercise, I could concievably grow to the size of the room that I'm sitting in. And this is a big room!
Thanks again,
Melina
