View Full Version : Need fettucini recipe tonight

Help! I can't find a yummy recipe that I once made from CL. It's an alfredo sauce for fettucini, which contains light cream cheese as one of the ingredients. I did look through the indices of the past 4 years of CL and only found one fettucini alfredo recipe that contained half and half and butter and I know the one I used had light cream cheese. I tried a search on CL and found nothing under fettucini, alfredo, alfredo sauce or fettucini alfredo, so I don't know what I was doing wrong, but that seemed weird. Can someone help? I would love to make this tonight! Thanks!

Fettuccine Alfredo

INGREDIENTS FOR 4 SERVINGS:
1 tablespoon margarine
2 small cloves garlic, minced
1 tablespoon all-purpose flour
1-1/3 cups skim milk
2 tablespoons light process cream cheese product
1-1/4 cups (2-1/2 ounces) grated fresh Parmesan cheese, divided
4 cups hot cooked fettuccine, cooked without salt or fat
2 teaspoons chopped fresh parsley
Freshly ground pepper

INSTRUCTIONS:
Melt margarine in a saucepan over medium heat. Add garlic; saute 1 minute. Stir in flour. Gradually add milk, stirring with a wire whisk until blended; cook 8 minutes or until thickened and bubbly, stirring constantly. Stir in cream cheese, cook 2 minutes. Add 1 cup Parmesan cheese, stirring constantly until it melts. Pour over hot cooked fettuccine; toss well to coat. Top with
remaining 1/4 cup Parmesan cheese, fresh parsley, and pepper. Yield: 4 servings (serving size: 1 cup).

Here's a good and easy recipe for Fettucine or Linguine.
Grated rind of 1 lemon
Juice of 2 lemons
good pinch of kosher salt
1 tsp. dried parsley
1/3 cup good olive oil.

That's the basics. Then you can add toasted pine nuts, green beans, chicken, tomatoes, shrimp..... anything.
This is a family favorite... even the kids love it!!
