View Full Version : Pulled Chicken--Pulled Pork?

I made for dinner this evening the Pulled Chicken Sandwiches from the April Issue. The DH claimed them as a real winner. I'd definitely make them again but was wondering if I could substitute boneless pork chops in lieu of the chicken breasts? We're fond of pork BBQ and thought the flavor from the rub would also work with pork. But here's the bottom line...I have too many boneless pork chops in the freezer that I need to use so I'm open to your thoughts.

I'm not sure pork chops "pull" like regular pork or a chicken breast would. I think pulled pork is usually made with the shoulder -- one of those cuts you're suppose to braise or slow cook all day.

Its worth a try, though.

I use pork loin roasts, cooked all day in the crockpot, to make pulled pork. The chops might not pull as easily, but if you cooked them for several hours in the crockpot (with water to cover, and seasonings if you desire), I would think they would work. If they don't pull easily, I would just dice the meat. The BBQ place we frequent uses the diced method for their BBQ pork sandwiches and it is really good!

Ideas to use up some of yur frozen boneless p-chops:

1) Marinate for a few hours in your favorite marinade & then throw them on the grill.

2) Cut up into bite size pieces & add to your favorite chili recipe instead of using ham or turkey burger.

3) Marinate or apply a rub, let sit & then slice & pan sear for fajitas.

4) Broil & serve w/ onions, apples, sweet potatoes that have been browned in a bit of butter & brown sugar.

I always thought pulled was a term used for processing meat -meaning meat pulled from the bone = boneless. Am I wrong?

Pulled is a BBQ term and usually referrs to pork shoulder. It's smoked for several hours until the meat is very tender. The meat is then pulled off in clumps with the grain of the meat. When you go to a BBQ place here you can ask for the meat pulled or chopped. I like pulled because they often chop up a lot of the fat with the meat.

In this recipe, they're trying to get the same texture with chicken instead of pork. Pork chops won't "pull" because the meat is cut accross the grain like a steak. You could probably season chops and grill them to use in a sandwich.
