View Full Version : Question re: Anzac biscuits
I have a "best of CL" supplement (came out last year) and have made the Anzac cookies twice. (They have oatmeal, coconut, and cane syrup in them).
My cookies don't turn out anything like the picture (although they are still good). I followed the recipe exactly, but still had problems. For example, there wasn't enough liquid to moisten all the dough. Plus I feel like they weren't cooked long enough (or maybe the temp wasn't high enough?)
Any thoughts? Has anyone else made these?

I made these, but I don't know how helpful I can be. I recall them being very tasty, but very delicate coming out of the oven. Once they cooled, they were fine.

The first time I tried these they didn't turn out well. The second time they were good. My daughter and I liked them especially for a lower fat cookie(I think that is one of the hardest things to lighten) Who knows what I did the second time. The batter is stiff, but moist. The cookies were chewy after they were baked. They may have seemed under baked, but I think that is the way they are supposed to be.

I made them once and they were delicious!! However, they were very moist and they spread out very thin!

In the Oct MS Living there is a recipe for Anzac Biscuits and before the recipe, the comments were that the cookie dough is very crumbly like the topping for an apple crisp, but the cookies turn out chewy and crisp.

Thanks for your feedback...my cookies did not come out very thin, which I think may be part of the problem.
When the directions say to drop level tablespoons of dough on the cookie sheet, does that mean a measuring tablespoon or a regular eating spoon? I used a measuring tablespoon and tried to flatten them out a bit, but the dough is so crumbly it didn't work very well. http://www.cookinglight.com/bbs/frown.gif
