Hi,
If you click on the "search" function on the top right corner, a screen will come up asking for search terms etc. If you type in "crockpot" (all one word) and ask to search the Great Food board - subject line only - you will find quite a few threads that might interest you. There may well be even more threads if you ask to search "All Open Forums and Archives". The archives and previous threads on this board are a fantastic resource!

Just tried this last week and it was really good - you can adjust the amount of cheese at the end or eliminate all together:
Southwestern Chicken (Serves 5-6 3-4 hours on H or 7-8 on L
1 can (15 oz) whole kernel corn, drained (do not put the fractions, too
lazy!)
1 can (15 oz) black beans rinsed and drained
1 jar of (16 oz) chunky salsa, divided
4 to 6 chicken breasts
1 C (4 oz) shredded cheddar cheese.
Combine the corn, black beans and 1/2 C of salsa in a slow cooker.
Top with chicken and pour remaining salsa over chicken. Cover.
Sprinkle with cheese at end of cooking cycle and cover until melted,
about 5 minutes.

We tired Lanie's recipe tonight and it was a big hit. I served the chicken and sauce over rice and topped it with a dollop of sour cream and some chopped green onions. Everyone really liked it....

Thank you lanie for your southwestern chicken recipe. I just tried it today and boy was it a keeper. (I served mine over polenta, but I think it would be good over crushed, baked torillas too)
Not only was it delicious but it was soooo easy! Plus I really love crockpot recipes.
Thanks again. Got any more crockpot recipes like this one?

laden - another thing that I have been doing lately is put a piece of pork (I did use tenderoin a couple of times) or like a back ribless piece, - put in the crockpot and pour on a good bit (1 cup or tad more) of your favorite barbeque sauce (I used Diana's chicken & rib) and let it go all day - then shredded it and put on a bun or put over rice - really good!

I also did this one last week and it was really good too:
Chicken Delicious
Ingredients:
8 to 12 boneless chicken breast halves
lemon juice to taste
salt and pepper to taste
celery salt to taste
paprika to taste
1 (10.75 ounce) can condensed cream of mushroom soup
1 (10.75 ounce) can condensed cream of celery soup
1/3 cup dry sherry OR white wine
grated Parmesan cheese for topping
Directions:
1 Rinse the chicken breasts and pat dry. Season with the lemon juice, salt, pepper, celery salt and paprika to taste. Place in a slow cooker.
2 In a medium size bowl mix the mushroom and celery soups with the sherry/wine. Pour mixture over the chicken breasts and sprinkle with grated Parmesan cheese.
3 Cover and cook on low for 8 to 10 hours OR on high for 4 to 5 hours.
Makes 12 servings
I did not make this much - halved it at least - but it turned out really good - the parmesan on top gave it a nice taste and serve over rice/whatever ....lanie http://www.cookinglight.com/bbs/smile.gif

check out the stew thread from a few days ago... There's a pork mushroom ragout that looks really good--and easy!
This is a great topic. I've been looking for some easy crock pot recipes. My grandmother moved in with me a few years ago and I really need some quick easy recipes for dinner. I went from just throwing something together for myself to having to actually cook something for someone else. She's not to crazy about sandwiches.
The web site is going to be very helpful.

A few weeks ago, pork loin was on sale. I made a garlic, pepper, rosemarry rub for the pork loin and rubbed it on. I then cut up carrots, potatoes, and onions and put it in the bottom of the crock pot. Then I put the pork loin on top and cooked on high for ~6 hours. It came out really tasty. I also tried it with another marinade. I just love how all the flavors melded together!

Here's a recipe that I think sounds yummy:
Turkey in Cream Sauce
1-1/4 cups white wine or chicken broth
1 medium onion, chopped
2 garlic cloves, minced
2 bay leaves
2 teaspoons dried rosemary, crushed
1/2 teaspoon pepper
3 turkey breast tenderloins (3/4 lb each)
3 tablespoons cornstarch
1/2 cup half-and-half cream (or milk)
1/2 teaspoon salt
In a slow cooker, combine wine or broth, onion, garlic and bay leaves. Combine rosemary and pepper; rub over turkey. Place in slow cooker. Cover and cook on low for 7-8 hours or until meat is tender. Remove turkey and keep warm. Strain cooking juices; pour into a saucepan. Combine cornstarch, cream and salt until smooth; gradually add to juices. Bring to a boil; cook and stir for 2 minutes or until thickened and bubbly. Slice turkey and serve with cream sauce.
Yield: 9 servings
Nutritional Analysis:
One serving, prepared with wine and skim milk, equals 179 calories, 190 mg sodium, 82 mg cholesterol, 5 gm carbohydrate, 30 gm protein, 1 gm fat, 1 gm fiber.

I cannot wait to try the Southwestern Chicken recipe. It is making me drool just reading it. Another easy thing to do with a crock pot is put some baby back ribs in water and cook all day while you're at work. When you get home and you just need to throw some barbecue sauce or a marinade on them and they are ready to eat. Good luck.
