First off, we weren't impressed. Good but not a make again. However, I used plain turkey sausage...couldn't find Italian turkey sausage.
Do you think it would make a big difference if I tried it again using the full fat Italian pork sausage? And would it really be worth the fat (three times as much, according to the nutrition labels at the store!)

Try a different grocery for Italian turkey sausage. I bought two pkgs. one called "sweet" and the other called "spicy" turkey sausage. I use the spicy in another recipe and I think now that the spicy would MAKE the soup. If you can't find the turkey sausage I'd skip the fat and the soup.

Try it with the hot or spicy turkey Italian sausage. It gives the soup a great flavor. I like Honeysuckle White or Turkey Store sausage. I've gotten so I use the spicy sausage for recipes calling for ground beef since the seasoning is so good.

I agree, the Italian turkey sausage makes the soup. If you use plain, you could try to add Italian seasonings and maybe some fennel to approximate the lack of spices. If I used pork sausage, I think I'd only use half the amount to control the fat content, but then I'd want to add more rice or something to bulk it up. Or maybe half pork sausage and half lean ground beef?

I couldn't find anything but sweet italian turkey sausage. I added about 1/4 to 1/2 tsp. crushed red pepper to the soup and it is now one of our favorites.

Thanks for your replies. I neglected to tell you my husband doesn't tolerate spicy foods so it looks like this will be a repeat for me when he is out of town.

I have a confession to make, I made this the other night without looking at the specifics of the recipe. When I went to the grocery store, I picked up plain Italian sausage. It wasn't until I got home that I realized that turkey sausage and fresh spinach was needed. I made it anyway and it came out ok, nothing spectacular. I hope to find turkey sausage and make it the "right" way.
