In the late 80's early 90's a recipe for carrot cake with a cream cheese frosting was in the cooking light magazine, my husband was in the service for 20 years, and during one of our moves I lost the magazine. Does anyone know what recipe I am talking about, or how I may find a copy of it, the cake was the best, it had pineapple in it, I cannot find another one that great.

I found one recipe Oct 95 but it does not have cream cheese frosting. In Five Star REcipes I found your recipe...Enjoy!

Carrot cake with cream cheese frosting
1 3/4 c all purpose flour
2/3 c whole wheat flour
2 tsp baking soda
1/8 tsp salt
1 tsp ground cinnamon
3/4 tsp ground allspice
1/4 tsp ground nutmeg
3/4 c firmly packed brown sugar
3 tab veg oil
2 eggs
3 c coarsely shredded carrot about 1 pound
1/2 c raisins
2/3 c non fat buttermilk
2 tsp vanilla extract
1- 8 ounce can crushed pineapple in juice drained
veg cooking spray
cream cheese icing
Combine first 7 ing in med bowl and stir well.
Combine sugar & oil in large bowl, stir well. Add eggs one at a time beating well after each addition. Stir in carrot, raisins, buttermilk, vanilla and pineapple. Add flour mix and stir well.
Spoon batter in a 13x9x2 inch pan coated with cooking spray. Bake at 350 for 30 mins or until toothpick inserted in the middle comes out clean. cool completely in pan on wire rack.
Prepare icing and spread over top of cooled
cake.
Cream cheese icing
2 tsp light butter (do not soften)
6 ounces Neufchatel cheese (do not soften)
3 3/4 c sifted powdered sugar
3/4 tsp vanilla extract
Beat butter and cheese at high speed of mixer until fluffy. Gradually add sugar, beat at low speed until well blended. Add vanilla, beat well.

This is my favorite carrot cake recipe- I usually skip the frosting and just sprinkle powdered sugar. Yummy! JennyLiz
