My husband and I are purchasing a house next week and will be spending the following 3 weeks painting, repairing, packing, moving, etc. Does anyone have any casserole (or anything else!) recipes that freeze well? I have 3 good lasagna recipes (spinach, eggplant, and traditional) that are my stand-by freezer recipes, but I can't imagine lasagna after lasagna after lasagna for 3 weeks!:)

YP,

Chili would work. Do you have an especially good recipe to share? I haven't made any in ages and ages so I didn't really think of that. I don't think I've ever tried to freeze it, either.

IMO, pretty much everything freezes well. Cabbage rolls, goulash, soups, beef stew, chicken tetrazzini, individual pizzas (or big whole pizzas, but they take up more room in the freezer), meatloaf and mashed potatoes, chicken pot pie, and I'm sure I could think of more.....

Congrats on your new house! It's certainly a lot of work, but sooo fun, and so rewarding when you're all done! (Although, one is NEVER "all done" with fixing up a house! :D )

... mmm ... not really ... I tend to just throw them together ... every recipe tends to be different ...

... if you have the CL complete ... that has around 6 recipes in it for different chili's ... i think i tried one ... if you don't have it ... let me know and I will give you a recipe ... just let me know what ingredients you like to put in and i will match it as best i can ... :D

I just posted a review for this recipe this morning... I haven't tried to freeze it, but it is very good and easy to prepare. I would think that it should freeze fine - at least it's worth a shot so that you don't have to eat lasagna every night!

Congrats on the new home... we did the same thing a year and a half ago, except we live around the corner from a pizzaria and managed to eat pizza and hoagies the entire summer!
