Is anyone besides me feeling an overwhelming urge to bake and freeze like a lunatic?! I am seeing so many casseroles and baked treats that would be so wonderful to have in my freezer for the holidays! I wish I had a Viking stove and a sub-zero freezer!

No, you are not alone is true. I recently bought a bigger freezer for my basement and it's nearly full(already). I will be well stocked for winter!! http://www.cookinglight.com/bbs/smile.gif

You are definitely not alone!!! I too just bought a freezer and a foodsaver just for that reason! I haven't really started the baking part yet, but I'm ready! I plan to fill the freezer with goodies to give for the holidays and have on hand for guests. We should weather any big snowfalls that keep us homebound pretty nicely this year!!

Hi Kathy,
Do you have any casserole recipes appropiate for freezing that you can recommend? Or for baked items or for anything you may have tested?
Thanks,
Melina

I have some suggestions. Several months ago I had to freeze a bunch of stuff:spaghetti pie, chicken and rice casserole, several variations of chili, spaghetti sauce, sour cream poundcake, chocolate pound cake, blueberry muffins, and the ever delicious monster cookies (hmmm...I havent' made those in awhile, come to think of it). Most of these recipes are posted on the BB or on the CL page, but I will be happy to post any.

Melina, I wish I did have great suggestions, like Susann. I just keep seeing so many baked treats and appetizers that look appealing. I think I will start with Susann's!
