My wonderful mother-in-law taught me this trick years ago. Cut a large square of cheese cloth and place it over your fist. Insert it into the turkey or chicken cavity so the edges come out a few inches. Place stuffing into cavity and twist and tie up the ends of cloth. When your bird is done, just pull out the cheese cloth "bag" and the cavity remains clean! I also make extra stuffing in a casserole. No more trying to scrape away the little bits inside, and less chance of bacteria with leftovers. http://www.cookinglight.com/bbs/smile.gif

What a wonderful idea. I'm off to buy some cheese cloth--which I've never kept on hand. That reminds me that my mom used to soak a big piece of cheese cloth in butter (or oil), wring it out and cover the turkey with it while it was roasting. She would then continue basting if it began to dry out. It made for a beautiful browned, moist turkey.

This is only sort of related, but if you have extra cheesecloth, it's a great way to make yogurt cheese, which is an awesome substitute for cream cheese, and makes wonderful sauces, etc.

Thanks for the tip Erin!! I usually avoid stuffing the turkey because of the " scraping the little bits" problem. I will definitely try your tip this year!
