Tilapia

I keep seeing this fish refernced - what is is like? Is it a mild white fish? Could sole be used in its place?

You're right; tilapia is a really mild, relatively delicately fleshed fish...kind of like sole. I certainly think you could substitute one for the other. My mom, who doesn't like "fishy" fish, really likes tilapia.
