I made the spinach gnocchi last night, and even a half recipe made WAY too much dough. I was wondering if it was safe to refrigerate gnocchi dough containing raw egg, and if so, how long it would last - any ideas?

I make ricotta gnocchi all the time, especially in the winter months. Form the gnocchi and lay them in a cookie sheet to fast freeze. When the gnocchis are frozen, bag them up and freeze.
