View Full Version : chipotle peppers in adobe sauce

I tried a new recipe tonight that called for 1T. minced adobe pepper in adobe sauce. Now I am wondering what to do with the rest of the can. I transferred it to a glass jar and put it in the refrigerator. Does anyone know how long they will keep? If I freeze them, and then thaw them, and then only need a tablespoon again; can they be repeatedly frozen? And finally, how do you use them? What kinds of things do you put them in? Thanks for your help.

Hi! :) This comes up time and again ... if you do a search for freezing and adobo (you might have better luck with "adobo" rather than "chipotle" due to the wild spelling differences) you should find some solutions.
I've had success using an ice cube tray. I spoon 1 pepper and a bit of sauce into each well. I freeze it and then pop them out into a baggie. :) That way, it's very easy to use just 1 pepper.

I'll make it easy for you. That darn search function never ceases to annoy me!
I freeze them in an ice cube tray. About 1 T in each cube. Then I transfer them to a zip lock baggie and keep them in the freezer. I don't really know their life span in the freezer, but probably a couple of months.

THe ice cube tray is a good idea. I used a cookie sheet and covered with waxed paper, then put one chile with some sauce separated out on the wax paper and then froze. Then I wrapped each in foil (anal, I know) and put the whole works in a zip lock bag.

I use Lara's method of freezing on a cookie sheet covered with waxed paper. Works like a charm. I have kept frozen peppers for over 3 months in the freezer and they have been fine when I thawed them.

I use Lara and Peggy's method also. I have white ice cube trays that came with my freezer/refrigerator and I don't think the government (military housing) would like orange stained ice cube trays LOL!
