okay, so this isn't ingeniously creative, but I just wanted to share a very yummy salad I just made myself for the first part of my dinner. (I went to a new farmer's market (new for me) and was inspired to use my ingredients) I used arugula leaves as the base, and chopped 3 pink moroccan olives to sprinkle on them. I used the brine (no oil) in the olive jar as a dressing, and broiled mozzarella over 4 vine-ripe tomato slices; the heat of the tomatoes wilted some of the arugula...it was so good! Sorry, I was just excited, and my SO doesn't get very hyped up about what I had for dinner. http://www.cookinglight.com/bbs/tongue.gif

Emilycat, that sounds delicious! Did the juice of the broiled tomatoes serve as a kind of "vinaigrette" for the arugula? Ooo, I must try something like that!

The juices from the tomatoes kind of ended up coating some of the leaves, but before I put the tomatoes on the arugula, I sprinkled the leaves with the olive brine. The jar has a lemon in it, and it's really flavorful --just vinegar with the olives and lemon. Mmm.
