View Full Version : Has anyone frozen . . .
I want to make some mini desserts and freeze them so that I will be ahead for Mother's Day. Has anyone made any of the following and frozen them with good results?
Pecan Tassies in Cream Cheese Pastry
Peanut Butter-Fudge Cups
Mini Peppermint and Choc. Chip Cheesecakes
Mini Mocha-Toffee Crunch Cheesecakes
Lemon-Cream Cheese Cookie Cups

Hi Pat.
I have frozen the tassies, the cream cheese cookie cups (they both froze very well) and I have the peanut butter fudge cups in the freezer but haven't tried them yet. Shall I go sample one for you??? :D
And funny - I was going to freeze the mini cheesecakes too, but froze the Lemon-Swirled Cheesecake instead. I think both of the cheesecakes would fare just fine - the cream cheese cookie cups did.
Sounds like we like a lot of the same desserts - not to mention the convenience of freezing them ahead of time. Looks like your mini-muffin pans are getting a good workout! I love mini desserts, so mine get a good workout too! :)
Thanks for such a quick answer. Two reasons for making these ahead and freezing. DD gave me the pans for my birthday and I wanted to make some things for the family for when they come home for mother's day. Also there is a delivery problem with the only drug I have ever taken that helps my RA and I anticipate being very unwell soon so I want to make these while I am still feeling good and have them ready in case I don't get a delivery by then.

Sorry to hear that! I hope your meds arrive quickly! Sounds miserable.

Yikes, Pat, hope your medicine comes soon. Had a similar experience a while back and it was not fun. Anyway, I've frozen about all of these with great success.

I've frozen the mini mocha-toffee crunch cheesecakes successfully, and I used the packaging that the mini frozen phyllos had come in to hold them. It worked perfectly.

did your meds get there in time. RA is it arthritis?
Thanks for asking about the meds. No, the company is telling my pharmist that it will be another three to four weeks. It is an injection that I do myself two times a week and today was the first day without the shot. I will be ok today but next week everything will be going downhill fast. Yes, RA stands for Rheumatoid Arthritis. It is a relatively new drug and seems to be in short supply. I am praying that it will arrive any day so that I can continue with normal activities. Please keep me in your prayers.
