View Full Version : Blackberry Jam Cake - just out of the oven

It's cooling on the rack now - and it smells great! :) I'm hoping it will taste good too. I don't have Blackberry Jam, but I have lots of seedless Black Raspberry Jam, so I am sure it will work.
It's not going to be a tall cake, similar to the Lemonade Cake, but I think this is one way CL keeps the calories down. I'll post the review once we dig into it tonight.

Well, I made the cake and I didn't use as much jam as the recipe stated. They asked for 1 cup (1/2 cup between layers and the other cup on top). I used about 2/3 of a cup.
DH eyed the cake right away - wanted a big piece. Well, he thought there was too much cake,:confused: and not enough jam.:rolleyes: I thought there was too much jam (I didn't tell him I cut it back).:p I think I will just serve him the jar of jam with a spoon next time.:D
The taste of the cake itself seems good. Since there is cinnamon and nutmeg, it is a little spiced, but not overpowering. I find the jam to be overpowering to really appreciate what the cake tastes like alone. I think I will make the cake again one day, and just leave out the jam. I would rather put some fresh strawberries on top - or some other fruit (maybe even lemon curd) than the jam.
Hmm, maybe I should have sandwiched some peanut butter in between as well. I just might add some to my next piece:)

Funnybone, maybe you should try it with the caramel sauce from the Turtle Cake. They say it goes well too. What do you think?

I think that would have been better than the jam, but I wanted to save that topping for it's cake before I tried it on another.
I gave the cake another chance today, and the jam flavor is just overpowering. And to think I eased up on the amount too:rolleyes:
Anyone else making this one?
