A few questions from me this morning ... :)

(1) Does anyone have a breaded shrimp recipe? Or a recipe that will leave the shrimp with a nice crispy outer layer?

(2) On the community homepage, the picture above the Supper Clubs shows a salmon fillet on top of a bed of rice/barley/cousous (something). I believe it is in the new CL (still haven't got mine). Would anyone care to share that recipe with me?

Cheers.

The salmon is lying on a bed of wild mushroom risotto. Here's the link for the "tried and true" menu that the recipe is on. http://www.cookinglight.com/cooking/mp/entertaining/package/0,14343,233167,00.html

I think it's yummy.

I don't think it's possible to have "too much" shrimp! :D :D :D :D

I think a "normal" serving of shrimp would be 3-4 oz, cooked. So you could take your shrimp count (the number per pound, which is usually listed somewhere—on the bag or the at the deli case), divide by 4, and get an approximate number of shrimp per person. Medium shrimp theoretically run from 36-50/lb, so 10-12 is probably an average serving. The count is probably a better reference than the "size," which may vary depending on your own (or the dealer's) personal preferences. Some of those medium shrimp look pretty small to me. :p

I think 10 is a nice serving also (beside DH would cry if I gave him anything less - he likes his food - I'm surprised I have got to give in to my attemtps to cook vegetarian once a week).

your right ... sometimes I wonder whether 'medium' shrimp and small ones ... especially after they are cooked ... its such a shame to see them suckers decrease in size ...
