I'm a big fan of the brownie caramel combo - here is the world's best pie - 1/2" of caramel topped with 1/2" of brownie. Incredible. Served warm with a scoop of vanilla ice cream it's unreal. Anyone else have any favorite sinful recipies?
1 can sweetened condensed milk
20 unwrapped caramels
1 egg
6 oz choc chips
graham cracker crust (I cheat and use the prepared ones)
Over low heat, melt unwrapped caramels with 2/3 C sweetened condensed milk. Stir until smooth.
Pour Caramel mixture into graham cracker crust.
In microwave, melt choc. chips. Mix the chocolate in a medium bowl by hand with the egg and remaining sweetened condensed milk. Pour brownie mixture over caramel mixture. Place in oven at 350 degrees for ~30 minutes or until brownies are set.
Allow to mostly cool, serve slightly warm with a scoop of vanilla ice cream!

The pre-made crusts definitely work great. I've even used one of the chocolate keebler crusts and that was wonderful. The pie is pretty rich though so you don't need much more to make it perfect! I'd love to hear if you guys tried it and liked it and if you have any other recipies that should never be posted on a "cooking light" board but are worth the necessary damage control later on!

I am missing something here and am probably showing my ignorance but what do you mean by unwrapped caramels. I'm imagining something covered in paper or foil.

Kelly, I have mentioned that I have been working on a collection of recipes that include pecans. Your recipe looked like the kind of rich, simple thing that would appeal even to those who don't do a lot of cooking or baking, so I added pecans to it and included it in my list. Thanks for sharing it!
