Okay, I've got a major craving for meat loaf tonight (no, I'm not another pregnant Susan! ;-) I have 2 lbs. of ground beef ready to go. I found this recipe through the CL search and wondered if anyone had tried it. Thanks for the input!

Home-Style Meat Loaf
3/4 cup ketchup, divided
1/2 cup quick-cooking oats
1/4 cup minced fresh onion
2 tablespoons chopped fresh parsley
1 tablespoon brown sugar
1/4 teaspoon salt
1/4 teaspoon pepper
2 large egg whites, lightly beaten
11/2 pounds ground round
Cooking spray
Preheat oven to 350`. Combine 1/2 cup ketchup, oats, and next 6 ingredients (oats through egg whites) in a large bowl. Add meat; stir just until blended. Shape meat mixture into an 8 x 4-inch loaf on a broiler pan coated with cooking spray. Brush 1/4 cup ketchup over meat loaf. Bake at 350` for 1 hour and 10 minutes. Let stand 10 minutes before slicing.
Yield: 6 servings (serving size: 1 slice).

I tried it and did not like it. It was bland. The texture was a bit strange, sort of mealy, probably the oats. Anyway I wouldn't make it again.

I on the other hand love this dish!!! I was raised on old fashion meat loaf and mash potatoes. After fixing this one I have thrown out all my previous recipes, even the one in my head and replaced it with this one. My husband even likes it (took it to lunch the next day) and he does not particularly like any of my "light cooking". He still wants the grease pot left on the stove!!! (For flavor)

I was reading one of my "other" cooking magazines today and they have this recipe which sounds kind of interesting. I just thought I would throw it out there.
Taco Meat Loaf
(Source: Quick Cooking)
1 cup crushed saltines
1 envelope taco seasoning mix
1/2 cup ketchup
1 can (4oz) mushrooms pieces, drained
1 can (2-1/4 oz) sliced ripe olives, drained
1 small onion, chopped
2 eggs, beaten
2 tablespoons Worcestershire sauce
2 pounds lean ground beef
Salsa, sour cream, shredded cheddar cheese and additional olives, optional.
In a bowl, combine the first eight ingredients. Add beef; mix well. Press into a greased 9-in. x 5-in. x 3-in. loaf pan. Bake, uncovered, at 350 degrees for 1 to 1-1/2 hours or until a meat thermometer reads 160 degrees. Serve with salsa, sour cream, cheese and olives if desired. 8 servings.

I haven't tried the Homestyle Meat Loaf, but it is almost identical to the meat loaf that I make with no recipe. I use ground beef or ground turkey, ketchup, egg, oatmeal, pepper, and half a package of Lipton Onion Soup mix. So it's almost identical except for the parsley and the brown sugar. I would think this recipe would be pretty good, but I guess it's just personal preference. I think the soup mix that I use is probably not as bland as just 1/4 cup onion. Maybe you should up the onion and add a little garlic?

Okay, I think I will try it! Thank you everyone for your responses. I probably will up the onion and ketchup. slknight, I like the Lipton Onion Soup mix idea and will have to try that another time. Cheryl,
I will have to try that Taco Meat Loaf too in the future since I am a major Mexican food fan!

This is also about the same recipe I was raised on but I add 3 tbs Lea & Perrins, 2 tsp cracked black pepper.

The meat loaf was delicious! My 15 1/2 month old loved it too. I am getting ready to have a meat loaf sandwich for lunch even! This crisp fall weather has got me craving stick-to-your-ribs food!

I have tried this and it is excellent. It is the only type of meatloaf I make. I just had 2 people over for dinner and they requested meatloaf and I made this one. And they loved it.
**I use a loaf pan and it came out fine.**

This is really similar to my mother's meatloaf recipe that I've made for years. I use bread crumbs, instead of oatmeal, and I add 1-2 tsp of Bells poultry seasoning to the mix. Yum http://www.cookinglight.com/bbs/smile.gif
