Sounds yummy - thanks for posting! I could eat mashed potatoes any time of the day!
Me too! I can 2nd that!! My hubby and I always have leftover mashed potatoes..I can't wait to try this! Thanks for posting!

I would like to share an interesting and very delicious recipe I found! I had some left over mashed potatoes and wanted a way to serve them for breakfast. So I searched around and found on epicurious "Baked Mashed Potato and Vegetable Omlet". I wanted to serve it to friends in from out of town, so I revised it a bit to make it a casserole and reduce the fat a little. It really turned out excellent, so here I am sharing. MASHED POTATO AND VEGETABLE BREAKFAST CASSEROLE
2 red bell peppers, chopped fine
1 green bell pepper, chopped fine
1 1/4 cup finely chopped onion
1 1/2 cups sliced mushrooms(I used 2 portobellos)
1 tablespoons olive oil
4 large eggs & 1 ½ C egg substitue
4 cups mashed potatoes with ½ C reduced fat sour cream & 4 oz reduced fat cream cheese
1/4 cup finely chopped fresh parsley leaves
s & p to taste
In a 12-inch non-stick skillet cook the bell peppers, the onion, and the mushrooms with salt and black pepper to taste in 1 tablespoons of the oil over moderately low heat, stirring, for 5 to 10 minutes, or until the vegetables are tender and all the liquid the mushrooms give off is evaporated. In a large bowl whisk together the eggs, the potatoes, the parsley, and salt and black pepper until the mixture is combined well and stir in the vegetable mixture.
Pour mixture into a 13 x 9 pan sprayed with cooking spray and bake in the middle of a preheated 375°F oven for approx 45-60 minutes, or until it is set. Serve warm.
