I made this tonight after reading the following review from Denise:
Frittata with Smoked Cheese and Canadian Bacon This was excellent and I will definately be making it again. I used smoked cheddar, and that, combined with the canadian bacon created a great flavor. I did use 1 1/2 cup egg sub instead of the 4 eggs and 4 egg whites. It was a very quick recipe to make and a huge serving for only 202 calories. This is a real keeper!
I also loved this frittata--for one thing it turned our perfectly for me, just like the picture. I used the shredded hash browns instead of southern style cause that's what I had on hand, used smoked gouda as the cheese, and probably doubled the green onions. This had GREAT flavor from the Canadian bacon. I am so glad I used it, as I debated subbing some bacon bits. It is a really generous portion, but I managed to eat it all. I served it with the suggested accompaniments from 4/01's Lumberjack Hash recipe--honeyed citrus salad and cornbread twists.
