I was just reading the thread about what did you make for dinner last night, and came across your posting. I would love to have your recipe for this. When I bought the supplement magazine I was very surprised at how easy this recipe looked and I LOVE CHOCOLATE ECLAIRS!!! I would love to have your version.

Here it is:

Chocolate Eclair Cake

3/4 box low fat graham crackers
1 lg. box fat free vanilla instant pudding
12 oz. Fat Free Cool Whip, slightly thawed
2 1/2 c. 1/2% milk

Line bottom of 9x13 pan with whole (2) graham crackers. Line sides with single width grahams. Mix pudding mix with 2 1/2 c. milk and whip till thick. Fold in partially thawed cool whip.

Pour 1/2 of pudding mixture over graham crackers. Make another layer of graham crackers. Repeat with remaining pudding mixture and a final layer of graham crackers. Cover with chocolate topping (recipe follows). Chill for at least 4 hours.

Chocolate topping

2 sq. semisweet chocolate
6 Tbs. light butter
8 tsp. powdered sugar

Melt chocolate and butter in suacepan over medium heat. Stir in powdered sugar. If necessary, add water to make it runny enough to spread on top of crackers.

The chocolate topping on this kind of hardens into a shell... Not like the creamy looking frosting in the picture form the Make It Ahead supplement.

This sounds much more like an actual eclair, but still looks pretty easy to make. I think I will try this for my moms birthday (of course I may have to make one to sample first ).

I have been making my own version of this for years, it's very similar, except that I use french vanilla pudding, I don't put graham crackers on the sides, and I cheat and use canned frosting in a pinch. I also found the earlier you make this ahead the better it becomes. Enjoy! Ann

I made this Saturday for a dinner party where I had to bring dessert. It was real good and everyone liked it, had seconds even! I have a couple of questions for next time though....first, I couldn't find a "large" box of pudding, so I used 2 of the only ones there and same amt of milk. The filling didn't come all the way up to the edge of the pan so I had little graham crackers sticking up all around the edge! Is the milk measurement supposed to coincide with the instructions on the pudding pkg? If I use 3 pkgs of pudding next time, how much milk?? I think I need more filling next time... I also used a whole pkg of graham crackers, not 3/4. I'm wondering if I should have used just the 1/4 graham cracker around the edges and that would solve all my problems??? Advice please!! All the guests want the recipe and I'd like to be sure of it before I give it to them since my host can't cook! I had to prepare the broccoli since she didn't know how to make it!!!!

I think your best bet would be to just use the 1/4 graham crackers around the edges... That's what I meant the recipe to read, but wasn't sure how to put it.... sorry.

Also, in response to the pudding question, a large box of pudding calls for 3 c. of milk, but the recipe only calls for 2.5--so that's your ratio if you DO want to make more pudding filling.
